Wow...I have tried many potato salad recipes but this is my all time favorite.  I used smoked paprika and added garlic salt, but otherwise, stuck with the recipe.  Amazing!  Thanks for sharing!!!

This classic vegan potato salad is so easy to make, uses less than 10 ingredients, and is ready in as little as 20 minutes. A rich and creamy no mayo dressing and crunchy celery bring this dish to life. It's perfect for cookouts, picnics, and summer potlucks.

The Best Vegan Potato Salad

Yukon gold or white potatoes (about 3 pounds)

3 tablespoons white vinegar

(ribs) diced

6 green onions diced

Vegan Cashew Mayonnaise (you’ll need to make a double batch)

1 tablespoon yellow mustard

1 1/2 teaspoons celery seed

3/4 teaspoon kosher salt

Smoked paprika, paprika, fresh or dried dill

Peel and cut the potatoes into cubes about 3/4&#8243; to 1&#8243;, add them to a large pot of cold water and bring to a boil. Once the water starts to rapidly boil reduce to medium heat and cook the potatoes for 15-20 minutes. The potatoes should be fork tender, but not super-soft or mushy like mashed potatoes.

Prepare the dressing while the potatoes cook by mixing the Cashew Mayonnaise, yellow mustard, celery seed, and salt and pepper. Set aside.

Once the potatoes are ready, drain and rinse them under cold water for 30-45 seconds as this will stop them from cooking. Place the potatoes in a large mixing bowl, add in the white vinegar, gently toss, and set aside to cool for 10-15 minutes.

Toss in the chopped celery and the green onions to the potato mixture but don’t mix until you’ve added the dressing. Add the dressing and gently fold it into the potato mixture until everything is well combined. Taste and season with salt and pepper as need. Cover and chill in the fridge for at least 2 hours or overnight before serving.

Sprinkle with fresh or dried dill, smoked paprika, or black salt before serving.

This is absolutely WONDERFUL!! If you search the entire web you won’t find anything better. It is amazing because it tastes so good and is so easy to make! This is going in my favorites collection as I will definitely be making it again - and again and again...

For sure it is the Vegan Cashew Mayonnaise that makes it. Store bought mayo could never taste as good. I used russet potatoes instead because that was all I had. Instead of boiling them I simmered them very slowly which produced a finished texture similar to red potatoes. Next time I might add some dill pickle.

To a large mason jar or bowl add the mayo, sour cream, mustard, salt and pepper, garlic powder, onion powder, paprika, dill, and vinegar.

Whisk all the dressing ingredients together (or cover the mason jar and shake to combine) and set the dressing aside.

Wash and chop the potatoes. You can peel them first, or leave the peels on - your choice.

Add the potatoes to a large pot and add water just until the potatoes are covered with water.

Add the pot to the stove on medium-high heat and wait for the water to boil. Once the water begins to boil, turn the heat down to medium, cover the pot and let the potatoes cook for about 8-10 minutes. You&#039;ll have to check on them every few minutes to make sure they don&#039;t over-cook. You&#039;ll know they&#039;re done when you can pierce one with a fork without too much force but all the pieces are still intact.

Use a colander to drain the potatoes and rinse them under cold water until they cool to room temperature.

Once the potatoes are cool, be sure to let them dry for a few minutes before assembling the salad. If your potatoes are wet the dressing won&#039;t stick to them and you&#039;ll end up with a mess. The best way to do this is to lay them out on a clean kitchen towel for a few minutes.

While you&#039;re waiting, chop the celery, hard boiled eggs, and green onions.

Add the potatoes to a large bowl and add the dressing. Toss the potatoes until they&#039;re well coated. Add the celery, eggs, and green onions, and toss gently.

If you&#039;re serving this dish at a dinner party or to a crowd, now&#039;s a good time to transfer it to a clean bowl. Tossing the salad in this creamy dressing creates quite a mess.

Garnish the top with some chopped fresh chives, a sprinkle of smoked paprika, or fresh dill, and refrigerate until you&#039;re ready to serve!

Once they are cool enough to handle, peel and chop into small cubes.

Garnish with the remaining green onions, and serve.

Vegan Mexican Potato Salad (Ensalada de Papa)

This recipe for the best potato salad is light and flavorful. Potatoes, celery, onions and eggs are combined with a delicious homemade dressing infused with herbs and spices.

Best Potato Salad Recipe

Quarter potatoes (or halve if they are small red potatoes) and place them in a 5-quart saucepan. Fill the pan with cold water until the potatoes are covered by 1”

Bring water to a boil and boil until the potatoes are soft and easily pierced with a fork (but not falling apart).

Drain the potatoes in a colander and let them cool until they are cool enough to touch. Mix/toss them every few minutes to help release heat from the bottom layer of potatoes.

Once the potatoes are cool enough to handle, peel the skins off of them, then dice them into ½” pieces.

Transfer the diced potatoes to a large bowl (preferably one with a lid because you will be chilling the salad).

Prepare the Potatoes

While the potatoes are boiling, make the dressing.

Whisk together mayonnaise, mustard, honey, lemon juice, sea salt, pepper, paprika and fresh dill in a small bowl until combined.

Make the Dressing

Add the celery, green onions, and hard-boiled eggs to the diced potatoes in the large bowl. Stir to combine.

Add the dressing and mix until evenly distributed.

Assemble

Cover the potato salad and chill in the refrigerator for at least 6 hours, or overnight.

Sprinkle with additional fresh dill and serve cold.

Made this and it was delicious! I normally use yellow mustard instead of Dijon and also relish! I followed the directions and the dressing is awesome!

I also add sweet relish &amp; some diced red &amp; green bell peppers.  The bell peppers give it a nice crunch &amp; great added flavor!
