These little lavender meringues with lemon curd make a lovely light pudding and are perfect for an Easter dessert.

Lavender and Lemon Easter Meringue Nests

250 g (9 ounces) caster sugar

bake-safe lilac food colouring,

250 mL (9 fl oz) double cream

tbsp. runny honey

lemon curd

Heat oven to 110°C (90°C fan) mark ¼. Line a baking tray with baking&nbsp; parchment. Draw 8 circles measuring 9cm (3½in), spaced well apart, on the&nbsp; baking parchment. Turn it over so the ink is underneath. With a pestle and&nbsp; mortar, finely grind the lavender. Set aside.

In a large bowl, whisk the egg whites on a slow speed until foamy. Increase the speed and whisk until stiff peaks form. Gradually add caster sugar, 1heaped tbsp at a time, whisking back up to stiff peaks after each addition. When all the sugar is incorporated and the mixture is thick and glossy, whisk in the ground&nbsp; lavender. If colouring your meringues, add food colouring a drop at a time to&nbsp; reach a pale lilac colour. Spoon into a large piping bag fitted with a 1cm (½in) star nozzle.

Pipe meringue on to the circles in a flat round shape, then build up the sides to form a nest by piping again around the edge of the circle. Transfer to the bottom shelf of the oven. Bake for 1hr 30min until firm and set underneath. Switch off oven and leave inside to cool.

75 grams/2½ oz unsalted butter

full-fat cream cheese,

300 grams/10½ oz mascarpone,

200 grams/7 ounces icing sugar, sifted

tsp vanilla extract

100 grams/3½oz malted milk balls (optional)

An old-fashioned English bread and butter pudding that goes easy on the wallet. Day-old bread works best in this recipe.

Each serving provides 408 kcal, 12.5g protein, 44g carbohydrates (of which 20g sugars), 20g fat (of which 11g saturates), 2g fibre and 0.9g salt.

The hardest thing about making vanilla pudding from scratch is not eating it all at once. Drop the instant pudding mix and try this recipe!

Vanilla Pudding

Tbsp butter

Add the sugar and cornstarch to a medium-sized pot. Mix them together and set the pot over medium heat.

Add the milk and stir constantly until it comes to a boil. Continue stirring for 1 minute longer.

The milk should be thick enough to coat the back of wooden spoon. Take the mixture off the heat.

Beat the egg yolks. Whisk one tablespoon of the hot milk into the beaten egg yolks.

Continue to whisk in the milk, tablespoon by tablespoon, until the egg mixture is very warm.

Set the remaining pot of milk over medium heat and whisk in the warmed egg mixture. Bring the pudding to a boil while stirring constantly. Continue stirring for 1 minute longer.

Take the pudding off the heat. Add the vanilla and the butter. Stir until the butter has melted.

Strain the pudding through a fine mesh sieve.

Add the strained pudding to a large bowl. Serve warm or cover with plastic film touching the pudding&#39;s surface and store in the refrigerator until the pudding has cooled.

This is the easiest apple crumble recipe and an all-time favourite quick and easy dessert. 

Each serving provides 618 kcal, 6g protein, 83g carbohydrates (of which 43g sugars), 28.5g fat (of which 18g saturates), 3.5g fibre and 0.21g salt.

Prepare All Ingredients

As a first step, prepare all of the ingredients for the chia pudding and coffee topping. 

Grind Chia Seeds

Add the Chia seeds into a magic bullet or food processor and grind.

Add Milk and Sugar Sweetener and Mix

Once your chia seeds are blended into a powder, add a nut milk to the same container and sugar sweetener. Close the lid and remix it. 

Pour into the Glass

Pour into the glasses in which you plan to serve your pudding and store in the refrigerator until you are done with topping. 

Prepare Dalgona Coffee Topping

Place instant coffee, sugar sweetener, and boiling water in equal parts into the food processor and start mixing it. It will take approximately 3 to 4 minutes until the foam begins forming.

I have never tried using regular instant coffee granules in place of the instant espresso powder stipulated, though I dare say if you boosted quantities and dissolved the granules in a little boiling water first, you could make it work for you.
