Easy Roasted Cabbage

Preheat the oven to 475°F and line two large rimmed baking sheets with aluminum foil for easy cleanup, if desired. Set aside.

Use a sharp knife to trim off the excess stem, then slice the cabbage in 10 to 12 wedges, leaving the core intact. This helps keep the cabbage together.

If using bacon grease, warm it slightly in the microwave until it&#39;s pourable. Drizzle the bacon grease or olive oil over the cabbage wedges and divide them evenly on the baking sheets. Sprinkle both sides of the cabbage generously with salt and pepper.

Bake for 35 minutes or until the cabbage is tender and the edges are deep golden brown.

Cut cabbage into wedges and place them in a single layer on a baking sheet. Pour 1/2 cup of water on the bottom of the baking sheet.

Cover the cabbage with foil and bake at 350°F for 45 minutes. Remove the cabbage from the oven and allow it to cool completely at room temperature.

In a small bowl, whisk the salt, pepper, pressed garlic, oil, and vinegar until well-combined.

Slice the cabbage into smaller wedges and place them on a serving tray. Pour the marinade on top.

Prep the cabbage. 

Preheat the oven to 425 degrees F. Slice the cabbage in half or quarters for cabbage wedges, and rinse well to remove any dirt or bugs hiding between the layers.

Make the sauce

In a bowl, mix the soy sauce, sesame oil, pepper, maple syrup, rice wine vinegar, garlic, and ginger.

Flavor the cabbage. 

Place the cabbage on a baking sheet, cut side up, and pour over the sauce. Massage the sauce into the cabbage so it gets between each layer.

Roast

Place the pan with the napa cabbage in the oven and roast for 15-20 minutes. Check for doneness at the 15-minute point, and continue to cook another 5 minutes if needed. Serve warm, topped with sesame seeds and scallions.

This was great! I had a head of cabbage I didn't know what to do with, so this really hit the mark. I had it with a pot roast, which didn't really fit, but everything tasted good.
