Easy roasted eggplant is the perfect addition to any meal.

Roasted Eggplant

eggplant

kosher salt

olive oil

black pepper

Salt

Cut off ends of eggplant and slice into 1/3 inch rounds. Place a wire rack on a baking sheet.  Lay the eggplant on the rack. Liberally sprinkle each side of the steaks with the salt and let the eggplant sit for 15 minutes.

Pre-Heat

Preheat oven to 400 F degrees.&nbsp; Line a large baking sheet with parchment paper.

Rinse

Rinse the eggplant under cool water and thoroughly pat dry with a towel.

Prep

Arrange the eggplant and single layer on the parchment lined baking sheet. Brush both sides lightly with olive oil and a light sprinkle of black pepper.

Bake

Roast the eggplant in the oven for 10 minutes. Flip and roast for an additional 10 minutes. Serve as desired.

Preheat

Preheat oven to 400 F degrees. Line rimmed baking sheet with parchment paper or lightly brush with oil.

Cut onions into 1/2 inch slices. Arrange onions on a baking sheet. Brush lightly with oil and season with salt and pepper.

Roast

Roast until caramelized and tender, 15 to 20 minutes. Flipping once halfway through.

These roasted red onions look so flavorful. I can't wait to try them out!

My family loves red onions! I can't wait to make these ones- I bet they'd taste great on a sandwich!

We used this as a burger topping and as a salad addition. Yum!

Makes my cooking and recipes all the more special and yum.

We only had sweet onions on hand and this recipe worked just as well as red. They were our veg of choice with lamb chops.
