jalapeño peppers* ((leave the seeds

cilantro

tomatoes of varying sizes, chopped

cumin

sea salt +

lemon juice

Add all ingredients to the bowl of a food processor. I like to add in the jalapeños, onion and garlic first and then the cilantro and tomatoes, so the tomatoes do not get too liquid-y. Pulse about 10 or so times and until all ingredients are combined and diced, but be sure to stop before the salsa becomes too watery. However, you can pulse longer if you do like your salsa with more liquid.

Taste the salsa and add more ingredients as desired. I would advise stirring in the extra ingredients, not pulsing in the food processor. The salsa will become too watery, quickly.

Transfer to a bowl and enjoy!

I prefer to refrigerate salsa for 1 day prior to serving to allow the flavors to intensify. Salsa will keep for about 1 week in an airtight container or jar in the fridge; however, it&#39;s never lasted that long in this household.

Homemade Salsa

The heat of this salsa is entirely dependent on the kind of chiles you use. Mulato chiles yield a brick red, earthy salsa, while Espelette salsa is the color of fresh cherries, hot yet fruity. Yahualica chiles de arbol yield a bright orange salsa that is fiercely spicy. Use milder salsas as a sauce for enchiladas and sprinkle hotter ones on finished dishes as a hot sauce. Try a mix of chiles to get rich flavors (Ancho, Mulato, Espelette, Red Serrano) with a touch of heat (Cascabel &amp;amp; Yahualica). 

Dried Chile Salsa Recipe

(30 grams) whole dried chiles, any variety

(10 grams) garlic

(90 grams) yellow onion, peeled

water

lime juice

avocado oil

salt

Using kitchen shears, snip stems from dried chiles and empty of any loose seeds. Don’t worry about removing every single seed, but removing some will reduce the chance of bitterness in your finished salsa. Snip chilies in half.

In a dry skillet over medium-high heat, toast chile halves for a few moments per side, just until fragrant. Do not burn.

In a small saucepan, combine onion, chiles, garlic and 2 cups of water. Bring to a boil. Remove from heat, cover and let steep for 10 minutes.

Using tongs, fish chiles and onion out of saucepan and place them into the jar of a blender or immersion blender. Do the same for cloves of garlic, pausing to peel them out of their papery skins. Reserve 1/2 cup of cooking water.

Add half of the reserved cooking water to blender and puree. Add lime juice, oil, and salt and blend to combine, thinning with more cooking water as needed. Add more salt and lime juice if necessary.

Store salsa in the refrigerator and eat within a week.

My Mama’s Basic Blender Salsa Recipe

Salt and pepper (to taste)

Add to Blender

Add all ingredients into the blender. Pulse just a couple of times.  Be very careful not to purée (I didn’t say this was a soup).

Pour Into Dish

Pour into your preferred dish and serve with your favorite chips.

Chipotle Salsa

(14.5 oz) cans fire roasted tomatoes

chipotle peppers

salt,

Tortilla chips,

Pulse all ingredients in a blender or food processor until no large chunks remain, but not completely smooth.

Salsa Taquera also known as Salsa de Chile de Árbol, a fiery salsa prepared with tomatoes, garlic,  and dried árbol chiles, which is served at taco stands throughout Mexico.

Salsa Taquera

plum tomatoes

white onion

árbol chiles (pepper)

tbsp cooking oil

Roughly chop the tomatoes and onion. Peel the garlic cloves. Remove the stems from the árbol peppers.

Preheat a pan with 2 tablespoons cooking oil to medium hot. Add the chopped tomatoes and onions and cook for 5 minutes stirring occasionally.

Add the garlic to the pan and cook for 2 minutes stirring occasionally.

Add the árbol peppers on cook for 1 minute more.

Blend all of the salsa ingredients for 30 seconds. While the salsa is still blending add 4 tablespoons of cooking oil and blend for 1 more minute until the salsa is smooth, shiny, and thick.

Taste and add salt if needed.

Easy Homemade Salsa 

carrots,

jalapeños, de-seeded*

green onions

tsp cumin

cayenne pepper (optional)

½ lemon

lime

Wash all of the produce and roughly chop it into evenly sized pieces about 2-3” long.

Add half of the tomatoes to a large food processor and process until completely broken down, reminiscent of a sauce. 

Add the green onion, cilantro, and garlic to the food processor and pulse until finely chopped. Use a spatula to scrape down the sides of the processor, if necessary. Add the carrots and jalapeños and repeat the same process, then add the spices, salt, lemon juice, and lime juice. Pulse briefly to incorporate, and adjust seasonings to taste

Finally, add the remaining tomatoes and pulse a few times, until the tomatoes reach your desired consistency.

Serve as desired and enjoy! This salsa is best enjoyed fresh, but leftovers will keep in the fridge for up to 5 days.

Fruit Salsa with Cinnamon Tortilla Chips

raspberries

Preheat the oven to 350F.

In a large mixing bowl, combine the halved raspberries, diced strawberries, diced cantaloupe, and diced apples.

Zest the lemon and add the zest to the mixed fruit. Cut the lemon in half and squeeze the juice into a small bowl. Remove the lemon seeds from the juice. Pour the juice over the fruit in the bowl; mix well.

Add the seedless raspberry jam to the fruit and stir until combined. Set the salsa aside while you move on to the next steps.

Spray both sides of the flour tortillas with non-stick cooking spray. In a small bowl, whisk together the sugar and cinnamon. Sprinkle the sugar mixture over both sides of each tortilla. Cut each of the tortillas into 8 wedges and place the wedges in a single layer on sheet pans.

Bake the tortilla chips (you may have to do this in several batches) at 350F for 8-12 minutes until they are beginning to brown around the edges.

Remove the chips from the cookie sheets with a spatula and place on a serving dish.

Serve the fruit salsa with the cinnamon sugar tortilla chips.

Cherry Tomato Salsa is naturally sweet with tons of fresh garden flavors. Made with only six ingredients - and no tedious chopping - it couldn&#039;t be easier to make.

Quick and Easy, Cherry Tomato Salsa

tomatoes tomatoes (small Roma tomatoes) and regular cherry tomatoes)

onion

jalapeño (Seeded and membrane removed)

cilantro (More if desired. You can use a mix of leaves and stems.)

kosher salt (Add more to taste if desired.)

lime, juiced

First, peel the onion and cut it in half. Then, add the onion and garlic cloves to the bowl of a food processor.

Chop the onion and garlic, then roughly chop one jalapeño and add it to the food processor. (Exclude the membrane and seeds to reduce the heat.)

Chop the jalapeño with the onions/garlic.

Next, add tomatoes then cilantro to the food processor.

Chop the tomatoes and cilantro to your desired consistency.

This next step is optional, but I like to do it - pour the salsa into a fine metal strainer over a bowl to get rid of any excess moisture. (The tomatoes and onions release a lot of liquid when you chop them up.) You want to do this BEFORE adding the salt and lime juice because you will strain out the salt and lime otherwise.

Return the strained salsa to a bowl (or the food processor), then add salt and the juice of a lime.

Mix well, then taste. Adjust with more salt, lime, and cilantro if needed. Serve with tortilla chips.

Add onion, jalapeno and garlic to the bowl of a food processor. Pulse 5-6 times, or until the bits are your desired size. Remove the cover and scrape down the insides of the bowl. Add remaining ingredients, cover, and pulse 1 or 2 more times, to combine.

So easy to make, but mega delicious! We used it with home-made empanadas, and couldn't stop eating them!

Made this yesterday with fresh chopped jalapenos, destemed, deseeded. Leaves a bit of an afterbite, but maybe a 2nd chopped jalapeno for a little more heat. But still excellent. Putting it on my homemade tamales using your recipe for the tamales and the red chili sauce with pork filling. Finishing up my third batch tomorrow in less than a week, and have a pork shoulder to start a fourth batch Sunday or Monday. Taking jars of this salsa, along with a jar of your Pico de Gallo, which is excellent, along with a dozen homemade tamales each for my attorney and his assistant on Monday. All excellent...even getting better at wrapping the tamales. Practice makes perfect, well maybe not perfect, but heading in that direction with more sequential batches.

We made this recipe yesterday.    We moved away from Texas and have been unable to get our favorite jarred salsa for so long.  BUT THIS IS SO MUCH BETTER.  Hands down!
