The best Caprese salad you'll ever have! Great ingredients are the key. Use ripe summer tomatoes, burrata or mozzarella, fresh basil and olive oil. Recipe yields 4 generous or 6 smaller servings.

Heirloom Caprese Salad

mixed heirloom tomatoes tomatoes

burrata

basil leaves (smaller leaves look nicer)

olive oil

black pepper

With a serrated knife, cut the tomatoes into 1/4&#8243; thick slices. Arrange them on a large serving platter, overlapping their edges and varying the shapes as best you can.

Cut the burrata or mozzarella into 1/4&#8243; to 1/2&#8243; slices (burrata is tricky since the inside is so creamy; I cut it into 1/2&#8243; slices and gently tugged the slices into smaller sections, see photos). Tuck the cheese around and underneath the tomatoes, dispersing it relatively evenly across the platter.

Sprinkle basil leaves all over, and tuck a few more into the crevices. Drizzle the olive oil over the salad. Sprinkle generously with salt and pepper.

For the best flavor (if you have the time), let the salad rest for 30 minutes so the tomatoes release some juices and the flavors have time to mingle. This salad is best served within a few hours. Leftovers will keep, covered and refrigerated, for up to 3 days.

I make this every summer -  I add sliced peaches, a drizzle of balsamic reduction from TJ's, and a sprinkle of Maldon sea salt!

I could eat Caprese salad every night for the rest of my life. We are making this tonight with heirloom tomatoes from the store and garden tomatoes from my yard. Found burrata, too. I love Caprese salad, one of the best I ever tried was served on a sea salt block. You really can't go wrong when your ingredients are so good! I do prefer mine with balsamic, and I too like to mix it up and add avocado slices and juicy peaches. The more summer bounty, the better!

I made this delicious and beautiful salad. I usually make little towers with the tomatoes, cheese and basil but this was so much better and the flavors married better. Using the heirloom tomatoes was a wonderful new element and added more flavor and of course the presentation was almost too pretty to eat! Thank for a new twist on an old favorite.

After enjoying an amazing ricotta appetizer at an Italian restaurant a couple weeks ago, I got it in my head to make ricotta at home, and I did it this morning! But I felt bad just standing at the counter and eating it on little slices of toasted French bread, so I used some to make this salad. Ricotta may not be the traditional cheese, but oh my, was it good! I'll make another salad for dinner guests tomorrow (if I don't eat all the cheese before then!) I can't wait to try this!  We've been addicted to Caprese Salad since our first tour in Italy.  Our stops included a visit to the Isle of Capri, as beautiful a site as this salad is delicious!  Last summer, I learned to make our own fresh mozzarella from whole milk.  You should try it, it only takes a few ingredients and about an hour and I get the equivalent of about two grocery store balls.  Oh, and try drizzling your salad with balsamic glaze just before serving.  I saw elsewhere that you love the taste and every Caprese I had in Italy was drizzled with it.

This Summer Grain Salad is the perfect salad to bring to a picnic, or to meal prep for lunches during the week! It&#x27;s filled with quinoa, farro, radishes, cucumber, cherry tomatoes, red onion, corn, green beans, bell pepper, feta, and a bunch of fresh herbs! The salad gets tossed in a white wine lemon vinaigrette and it&#x27;s incredibly fresh, texture-filled, and light!

Summer Grain Salad

quinoa

farro

cherry tomatoes, halved

cucumber

yellow bell pepper

green beans (about 1/3 lb.), cut into 1'' pieces

corn,

red onion

feta

basil

flat leaf parsley

chives

salt and pepper

white wine vinegar

lemon

shallot

garlic, minced

salt

pepper

extra virgin olive oil

Place your cooked grains in a large bowl and stir to combine. Set aside. Bring a pot of water to a boil for the green beans. Add a couple pinches of salt. Once boiling, add the green beans and blanch for 30 seconds - 1 minute, or until they turn bright green. Drain and run under cold water to stop cooking. Let cool.

Add radishes, cherry tomatoes, cucumber, bell pepper, green beans, corn, and red onion to the grains, along with a couple big pinches of salt and freshly cracked black pepper and stir to combine. Add the feta and the vinaigrette and stir to combine. Add the fresh herbs and stir once more. Season to taste with additional salt and pepper if desired. Serve with extra basil leaves.

This tomato, cucumber, avocado salad is an easy, flavorful summer salad.  It's crunchy, fresh and simple to make.  It's a family favorite.

Tomato, Cucumber, Avocado Salad

tomatoes – I used cherry tomatoes

cucumber – peeled and seeded then diced

avocado – diced

oz feta cheese –

tbs minced red onion

parsley

tbs red wine vinegar

Chop tomatoes into a medium dice. If using cherry tomatoes, cut in half. Add to a bowl.

Peel and seed one cucumber and dice. Add to bowl.

Remove pit, dice avocado and using a spoon scoop out the avocado from the peel. Add to bowl.

Add minced red onion and minced parsley to bowl.

Whisk together olive oil, red wine vinegar and black pepper &#8211; pour over salad.

Toss gently so the feta and avocado don&#8217;t break up. Serve immediately.

If refrigerating &#8211; keep the avocado aside and add before serving.

Well I tried this recipe and it is absolutely delicious only problem I had was that I didn’t really taste the avocado but that’s is a fixable problem!!! Just add more lol. Other that that it was absolutely delicious 😍😍 I loved it and my 2 year old daughter did too 💜

This is fun to make, is my young grandson’s family gathering contribution, and is so healthy!

Made this tonight and it was delicious.  I  forgot to buy feta so I put a little chopped asiago in it, and I added just a teeny amount of cilantro, which I'm not crazy for, but it seemed to fit - and a splash of lime.  Will definitely be making again and again!

Love this salad with that wonderful avocado. I also substituted mozzarella the small ball size for the feta. As mozzarella is not as salty as feta, I found I needed to add a little salt. The first time I made the salad I used feta. Second time followed someone’s comment and used mozzarella. Prefer mozzarella. Great salad!  Thank you for sharing your recipe.

Wow!  I made this and added a handful of cilantro to the mix.  It was so good, that I had teenagers fighting over it!

There are so many ways to make this salad and I have made them all for back yard bbq’s. When I seen this, I have to make it for a 4th of July bbq I’m going to. This salad looks so refreshing, especially with the Feta in it and I can’t wait! All these salads are also great for low carb diets.
