Easy, cheesy, totally dairy-free cashew queso! This luscious vegan cheese is loaded with flavor and easy to make, with just 7 ingredients.

Cashew Queso

cashews,

nutritional yeast flakes

vinegar-based hot sauce,

onion powder

garlic powder

Water

Place the cashews, nutritional yeast, hot sauce, onion powder, garlic powder, and 1/4 cup of water into the bowl of a food processor fitted with an s-blade.

Blend until smooth, stopping to scrape down the sides of the bowl as needed.

Thin with anywhere between 1/4 and 3/4 cup of water, depending on desired thickness (I used about 1/2 cup in the batch shown in the photos). Blend again until smooth.

Season the queso with salt to taste, and adjust any other seasonings to your liking.

Serve.

Boil cashews for 5 minutes or soak in hot water for 15-20 minutes.

Place all the ingredients into a high-speed blender and process until completely smooth.

Pour the mixture into a nonstick skillet or small saucepan and stir constantly over medium heat until it starts to thick and looks like melted mozzarella cheese.

Use immediately or store in an airtight container in the refrigerator.

Just tried this. Goes together quickly. No cashews so I subbed raw pumpkin seeds. Other than giving a slight greenish tinge of color, this was so good. Mouth feel very melty cheese. Good neutral cheesy flavor. I have really missed this! Can't wait to try it after it chills.

This is the first vegan cheese I have made and it is wonderful. They always seemed like too much trouble and many cannot be frozen. Used my food processor so maybe it would have been smoother using a blender but no complaints here.   Can’t wait to try a grilled cheese and pizza. Maybe even on a baked potato. Thank you Shane.

This recipe made my heart sing.  I was very happy to enjoy a pizza with your cheese, sauce, and breakfast sausage crumbles and baby spinach..  top with a balsamic glaze. Delicious!!!

I really loved this... Is a tablespoon of garlic powder correct? I may cut it down a bit next time. Or it could be I used granulated garlic so maybe that's stronger than powder@

Begin by boiling the cashews and carrots for about 5 minutes in a pot with enough water to cover them. Once the cashews and carrots are soft, strain out the water and transfer the softened ingredients to a blender or food processor. Keep in mind that a food processor tends to leave small bits of cashews.

Add the vegetable broth, lemon juice, nutritional yeast, tapioca flour, 1 teaspoon of smoked paprika, garlic powder, Dijon mustard, and sea salt to the blender. Blend until the texture is smooth and creamy.

Once all the ingredients have been blended, pour the mixture into a saucepan and whisk or stir over medium heat. Cook until the vegan cheese sauce starts to thicken and takes on a more stretchy cheese-like consistency. It should be stringy and melty. Be sure to adjust the heat if necessary to prevent it from burning.

Once you reach your desired thickness, remove the vegan cheddar cheese from the heat and use it immediately if you wish or allow it to cool and store it in the fridge.

Vegan Nacho Cheese With Hidden Veggies

sunflower seeds (soaked)

sweet potato (medium, cubed)

carrot (medium, chopped)

onion

garlic

tsp mustard (omit if allergic)

lemon (juiced)

banana peppers

tsp salt

paprika

water

On a sheet pan, add the sweet potato, carrot, garlic and red onion. Bake at 400F for 30 minutes, until soft.

In the meantime, boil the sunflower seeds for 10 minutes.

Once the vegetables are cooked and the sunflower seeds are soft, when safe to handle, transfer to a high speed blender with all remaining ingredients and combine until smooth. Add more water as needed to thin. Enjoy with nachos, or as a delicious pasta sauce.

Homemade Vegan Cheese Recipe (Sliceable and Grateable)

sunflower seeds

tbsp tahini

tsp miso paste

yeast

tbsp agar agar powder

Add all listed cheese ingredients apart from the agar agar powder and 1 cup of water to a high speed blender. Combine until smooth. You can transfer this to a mold now and set overnight, for a spreadable cream cheese like texture. 

For a sliceable texture like in the video, use agar agar. In a saucepan over medium heat, add the 1 cup of water and agar agar powder. Boil for 1 minute, stirring regularly. Remove from the heat, and pour it into the blender cup with the cheese mix. Blend until smooth.

Transfer to a cheese mold or Tupperware container. Add seasonings on top like fresh parsley, lemon zest and black pepper if desired. Place in the fridge overnight. Enjoy with Simple Mills crackers as desired. Store the cheese in the fridge for up to five days.
