In a medium mixing bowl add the flour, cocoa powder, sugar, baking powder, and salt. Use a whisk to combine. Make a small well in the center of the dry ingredients.

Add the eggs, oil, and milk to the well, and use the whisk to slowly combine the wet and dry ingredients. Stir well, until very few lumps remain.

Pour the batter into your waffle iron according to manufacturers directions.

When the waffle is done cooking, carefully place it on a wire rack to cool, taking care not to stack the waffles on top of each other. Repeat with remaining batter.

Preheat the waffle iron to the high heat setting.

In a medium bowl, mix the all purpose flour, whole wheat flour, baking powder, sugar, cinnamon, and kosher salt until thoroughly combined.

In another bowl, whisk the oil, milk, vanilla and eggs (or see Fluffy Waffles variation**). Pour the wet ingredients into the dry ingredients and whisk gently until the batter is smooth.

Grease or butter your waffle iron. Add the batter (a little over 1 cup for a Belgian waffle maker or a little over 1/2 cup for a standard waffle maker) into the center of the waffle iron, then cook according to the waffle iron’s instructions until golden brown: about 3 to 4 minutes depending on your waffle iron. Remove the cooked waffles and place them on a parchment-lined or greased baking sheet without stacking. Make the waffles to order, or place cooked waffles in a 250°F oven to keep warm.

Cooked waffles can be frozen; place them in a plastic bag and remove the remaining air with a straw before sealing. To reheat, remove from the freezer and lightly toast in a toaster.

Zucchini Vegetarian Waffles

Shred the zucchini using a cheese grater. I used the smallest sized holes on a box grater to get the mixture to be as smooth as possible, but if you prefer larger chunks of zucchini in the waffles, use a larger sized hole on the grater. You should end up with about 1 cup of packed shredded zucchini.

Use your hands or a towel to squeeze out as much moisture from the zucchini as possible. You may also place the zucchini over a sieve and use the back of a spoon to press down on it to remove the moisture. Once you remove the moisture, you should end up with a little over 1/2 cup of packed shredded zucchini.

Add the zucchini to a bowl along with the other ingredients. Mix well until combined. It may seem very dry to mix at first, but it will come together as you stir it all together. The mixture will be thick but should be well combined.

Pour a thin layer of batter into a preheated waffle iron and cook according to your waffle maker’s instructions. I used a mini waffle maker and it took about 3 minutes for each waffle to cook.

Preheat waffle iron. Preheat oven to 225°F or set on warm setting (only if you want to keep waffles warm and crispy while cooking remaining waffles.) Place a rack on a large baking sheet and place inside the oven.

Dry ingredients.

In a large bowl, whisk together all purpose flour, sugar, salt baking powder and baking soda (if using). Set aside.

Wet ingredients.

In a medium bowl, combine room temperature milk, eggs, vanilla extract and melted (and cooled) butter. Whisk to combine.

Add wet to dry.

Add the wet ingredients to the dry ingredients and stir just until combined. A few small lumps are fine. Let the waffle batter sit for 10 minutes.

Add batter to iron.

Grease waffle iron if needed with butter, oil or cooking spray (refer to product instructions if necessary) and scoop or ladle the batter onto the preheated waffle iron until batter is within ½ an inch from the edge. (I use about ¾ cup of batter for my iron.)

Cook waffles.

Cook until golden brown and waffle iron indicates the waffle is ready. If your waffle iron doesn&#39;t have a light that goes off, keep an eye on the steam coming from the iron. When it is almost gone, check your waffle as that is in indication it is done cooking.

Enjoy.

Remove waffle from iron and serve with butter, maple syrup, berries and/or whipped cream. You can also keep warm by placing cooked waffles in the preheated oven on the rack while the rest of the waffles are cooked.
