Grilled Flank Steak Summer Salad Cilantro Lime Vinaigrette

extra virgin olive oil

garlic (finely diced)

Teaspoon kosher salt

Teaspoon black pepper

cilantro

lime

juice of 1 lime

oz flank steak

salt and pepper

avocado

purple onion (diced)

sugar snap peas

cherry tomatoes (halved)

asparagus

yellow pepper (diced)

romaine lettuce

Combine Vinaigrette ingredients in food process and blend for 20-30 seconds.

Taste and make any necessary adjustments per your specific taste.

Place in refrigerator.

Season flank steak with salt and pepper.

Grill your steak on high heat for approx. 2 minutes per side and then move to a cool side and cover the grill.

Let steak continue cooking until it reaches your preferred doneness.

Remove from grill and let rest.

Add lettuce, asparagus, tomatoes, peas, onion, yellow pepper and avocado to your salad bowls.

Cut your steak into strips and place on salad.

Cover with your desired amount of vinaigrette.

This a great recipe!! I did use the cheat of buying the premade empanada discs.

Thanks so much for the recipe! Liked that it was mainly tasty beef and cheese - even my picky eater at home enjoyed these! Never thought I'd be able to make empanadas from scratch :) Didn't have tomato paste but I added a bit more oregano and garlic powder to taste. Soo delicious!

Never made dough from scratch but it was super easy. I forgot the cheese ( I know how does someone forget the cheese) but added it on top before the oven. Came out very tasty

This was the worse online recipe ive ever used. The dough was soup. I had to add 5 more cups of flour. 

I had just enough butter or I would have thrown it away and looked for anither recipe.

These where so good! I was out of oregano but I used dried parsley and they were still great!!! I also added some chili powder to my meat.

I used a 3-inch biscuit cutter so there wasn't much room for filling.  Next time I will cut the circles much bigger so I can have more filling.  The filling was good, we just wanted more.  I also cut the jalapenos to 1/4 cup to cut down on the spiciness.

Cheesy Beef Empanadas Are The Greatest Handheld Food

375 g plain flour,

salt

g butter,

garlic, crushed

beef mince

Salt

100 g chopped tomatoes

g Cheddar

g Monterey Jack

In a large bowl, whisk together flour, salt, and baking powder. Cut butter into flour using your hands or a pastry cutter until pea-sized. Add water and egg and mix until a dough forms. Turn dough out on a lightly floured surface and knead until smooth, about 5 minutes.&nbsp;

Wrap in cling film and refrigerate for at least 1 hour.&nbsp;

Make Dough

Preheat oven to 200°C (180ºC fan) and line two large baking trays with parchment paper.

In a large pan over medium heat, heat oil. Add onion and cook until soft, about 5 minutes, then add garlic and cook until fragrant, 1 minute more. Add beef and cook, breaking meat up with a wooden spoon, until no longer pink, 5 minutes. Drain fat.

Return pan to medium heat, and stir tomato paste into beef. Add oregano, cumin, and paprika, and season with salt and pepper. Add tomatoes and jalapeños and cook until warmed through, about 3 minutes. Remove from heat and let cool slightly.

Place dough on a lightly floured surface and divide in half.&nbsp; Roll one half out to half centimetre&nbsp;thick. Using an 11cm round cookie cutter, cut out rounds. Repeat with remaining dough. Reroll scraps once to cut out more rounds.&nbsp;

Lightly moisten outer edge of a dough round with water and place about 2 tablespoons filling in centre and top with cheddar and Monterey. Fold dough in half over filling. Use a fork to crimp edges together. Repeat with remaining filling and dough.&nbsp;

Place empanadas on prepared baking trays and brush with egg wash. Bake until golden and filling is warmed through, about 25 minutes.&nbsp;

Garnish with coriander and serve with sour cream.

For Oven

(50 grams) Onion

(14 grams) Garlic cloves

Breast (500 grams) Chicken

Cup Soy sauce

Red/green/yellow Bell Peppers

Prepare Ingredients

Prepare all of your ingredients. Cut chicken into small pieces and all of the vegetables into slices. Clean and cut broccoli into small florets and the rest of the stem into small cubes. 

Chicken and onion

Heat your skillet and add sesame oil. Once that is heated, add onion and garlic and caramelize both.  Add the chicken pieces into the pan and stir all together. Cook the chicken on a medium-high for about 10 minutes, depending on the size while mixing regularly. 

Spices and sauces

Once your chicken is cooked halfway, season it with salt and pepper. Add soy sauce, broth, and xanthan gum. Mix and cook for another 5 minutes or until the chicken is golden brown. 

Vegetables and Toppings

When your chicken is fully cooked, we add all the fresh veggies. First goes all of the colorful peppers which we mix. Followed comes broccoli. Combine stir fry together and let veggies soften slightly.  As last, add chopped green onions and sesame seeds.

Fish fillets are seasoned with Italian Herbs, salt, pepper, before they are grilled. When they are finished a splash of freshly squeezed lime juice and a light drizzle of truffle oil gives the fish a rich citrus taste.

Tablespoons vegetable oil

Salt and freshly cracked black pepper

Italian seasoning blend

Limes (halved)

Tablespoons chopped parsley

Truffle oil olive oil

Rub the fillets with vegetable oil and season with salt, pepper and Italian seasoning blend.

Grill the fillets skin-side up over medium-hot fire for 3 to 4 minutes. Flip them and cook an additional 2 to 3 minutes, until the fish is opaque all the way through.

Remove the fillets from the fire, squeeze a half lime over each fillet, drizzle some truffle or olive oil over them and then sprinkle with parsley.

Serve immediately

Oh, How lucky you are that you get fresh fish. Here it's expensive and I usually rely on frozen fish. It's nice but nothing beats fresh. I love grilled fish and I love the idea of using truffle oil. Saving this for later.

A deliciously fresh tasting seafood dish that is low in calories and quick to make -- just 30 minutes. The shrimp and pasta is flavored with a lemon sauce made up of fresh lemon juice, lemon zest, parmesan, and fresh basil. An additional flavor of fried capers gives it a special touch.

Lemon Shrimp Pasta with Parmesan, Capers, and Basil in 30 Minutes

FOR THE SHRIMP

shrimp

FOR THE PASTA

fettuccini (or long pasta of your choice)

kosher salt (plus

olive oil (separated)

parmesan cheese (plus more for topping (optional))

Tablespoon lemon

lemon juice (about 2 large lemons)

basil

capers (fried (directions in notes))

Make the shrimp: In a medium sauté pan, heat the Tablespoon olive oil over medium-high heat. Season the shrimp with the salt and pepper; add to the preheated pan in a single layer. cook for 1 to 2 minutes per side, or until pink and cooked through. Set aside.

Make the pasta: cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally to prevent sticking, about 8 minutes. Drain, reserving 1 cup pasta water. (see notes)

Meanwhile, whisk the olive oil , parmesan, lemon zest, and juice in a large bowl to blend.

Toss the pasta with the lemon sauce, shrimp and the reserved cooking liquid, adding it 1/4 cup at a time as needed to moisten. Season with salt and pepper; stir in the basil.

Garnish with the fried capers (see notes)  and more parmesan cheese.

Taste was great, but it was cold before you could eat it!  I had to take shrimp out &amp; microwave

What a refreshing and light pasta meal to have on a hot summer day! Tasty and so special, what can I add instead of shrimp?

My husband and I made this for a little date night at home, and we absolutely devoured it! The fresh lemon zest added the perfect zip, and the fried capers added such a nice flavor. Add in the fresh basil and you have yourself a wonderful pasta dish! I'm looking forward to making this one again.

Well the pasta lover in me LOVES the sound of this recipe. You can never go wrong combining seafood and pasta. So easy to prepare....yet so delicious. I would have no problem serving this to dinner guests. I know they would LOVE it.

An easy and healthy way to prepare broccoli. It is tossed with olive oil and then roasted with garlic. The roasted broccoli is finished with Parmesan cheese, fresh lemon juice and zest with a sprinkle of sunflower seeds.

Parmesan Roasted Broccoli

red pepper flakes

Tablespoons roasted sunflower seeds

Parmesan cheese

Tablespoons julienned (cut in slender slices fresh basil leaves. (about 12 leaves))

Preheat oven to 425 F.

Wash the broccoli and cut the broccoli florets from the thick stalk, leaving some of the stalk attached. Pull the florets apart. You don't want too small of pieces.

Place the broccoli florets on a foil lined sheet pan large enough to hold them all in a single layer. Toss the garlic on the broccoli and drizzle with about 5 tablespoons olive oil. Sprinkle with the salt and red pepper flakes. Roast for 20 to 25 minutes, until crisp-tender and the tips of some of the florets are browned.

Remove the broccoli from the oven and immediately toss with 1 1/2 tablespoons olive oi, the lemon zest, lemon juice, sunflower seeds, Parmesan, and basil.

Serve hot.

I really love broccoli. I know many people don't but this is like perfection to me. Broccoli paired with parmigiano cheese ... just one big YUM! Love the addition of sunflower seeds.
