Use aluminum foil to create a disc about 2 inches thick. Cut 1 disc our of parchment paper of the same size as the aluminum foil and place it on the aluminum foil. Place 1 skewer in the center of these discs. Place the other skewers in a circle around the edge of the discs.

Whisk the egg whites with half of the sugar, then gradually add the rest of the sugar as the eggs rise. Gently fold the powdered sugar into the egg whites. Place the meringue into the piping bag. Form a circle of meringue on the aluminum foil disc by weaving between the skewers. Continue around the skewers until the top of the skewers are covered with meringue. With the rest of the meringue, form two swirling discs on a lined baking sheet. Bake the 2 discs and the large structure for 2 hours at 215 °F.

Whip the mascarpone, chocolate spread, and heavy whipping cream. When the meringue is done baking, remove the skewers. Place 1 of the meringue discs at the bottom of the structure and spread half of the whipped cream on top. Place 1 layer of the spread on top of the whipped cream and place the second disc on top. Finish filling the structure with the remaining whipped cream. Cover with dark chocolate shavings and place in a cool place. Remove from the fridge, cut into pieces and enjoy!

This stabilized whipped cream is my all-time favorite, and it can be ready in 15 minutes! It's light and airy - perfect to top cupcakes or ice cream, dip fruit in, or just eat by the spoonful.

Mascarpone Whipped Cream Frosting

mascarpone cheese

vanilla extract

heavy cream

Chill a large mixing bowl in the fridge (optional, but strongly encouraged).

In your chilled bowl, combine mascarpone cheese and sugar on a high speed until completely combined.

Add vanilla and heavy cream, and mix on a low setting until it is mostly combined. Now increase speed to high and whip until stiff peaks form - it may take a little while, so be patient!

Once cupcakes have completely cooled, fit a piping bag with desired tip and go to town with frosting your cupcakes.

Mascarpone Whipped Cream

Forget Cool Whip and store bought whipped cream, homemade whipped cream is so easy to make that you won’t be able to come up with an excuse to not make it. Plus, once you’ve tasted the homemade version, you’ll wish you’d done it sooner!

Homemade Whipped Cream

heavy whipping cream (236 g, cold)

sugar (23 g)

Add all ingredients to a mixing bowl or stand mixer bowl. Stir to dissolve the sugar. Give it a taste to see if you want to adjust anything.

Beat with a whisk, a hand mixer or the balloon whip attachment on a stand mixer on medium speed just until stiff peaks form. Don’t over whip the cream

Easy Whipped Cream is a 3-ingredient recipe for whipped cream from scratch. Perfect for topping ice cream cake and other desserts!

Stabilized Whipped Cream Recipe

whipping cream

skimmed milk powder

Chill bowl and whisk for at least 1 hour before preparing.*

Using a stand mixer fitted with the whisk attachment or an electric mixer fitted with the whisk attachment, combine whipping cream, sugar, vanilla and skimmed milk powder.

Whisk vigorously for 1-2 minutes or until stiff peaks begin to form. You can certainly whisk by hand and work on your arm muscles, but it will take closer to 5 minutes.

Serve immediately or place in refrigerator. Homemade whipped cream only stays stiff for about 2 days. You can re-whisk it to bring back life, but it’s best served fresh.
