Warm the ranchero sauce on the stovetop. Pour the beans in a small sauce pot. Warm over medium heat until simmering, then turn off the heat.

Place the chorizo in a large nonstick skillet and set over medium-high heat. Break the chorizo apart with a wooden spoon, and brown for 5-10 minutes, until the chorizo starts to turn crispy. Pour the chorizo onto a plate.

Wipe the skillet out with a paper towel, then add 2 tablespoons oil and set back over medium-high heat. One at a time, add the tortillas. Let them puff up for 3-5 seconds, flip and repeat. Then remove the tortillas, and set on paper towels to drain. Repeat until all the tortillas are puffy and golden.

Using the same skillet, cook the eggs to order. Traditional Huevos Rancheros are made with sunny side up eggs, but I personally like scrambled eggs in this dish.

To Serve: Place two tortillas each, on five plates. Top with warm black beans, eggs cooked to order, chorizo, ample ranchero sauce, sliced avocado, and queso fresco.

Make 4 pieces of each cheese slice and keep on a plate.

Apply butter to pav/white rolls and roast them on medium heat (inner side down) till golden brown.

Flip them over and place cheese pieces and cook for another minute. Then keep aside.

Add butter, onions, green chillies, salt and mix well.

Break 2 eggs and sprinkle salt, onions, red chilli flakes, cheddar cheese and cilantro.

Cover and cook on low heat till egg white is just done.

Remove the lid, loosen edges and place the eggs on pav/white rolls.

Egg white should be completely cooked and egg yolk should be runny.

If you do not prefer runny yolk, cook eggs a bit longer till yolk is completely cooked.

An egg is the organic vessel containing the zygote in which an animal embryo develops until it can survive on its own, at which point the animal hatches. An egg results from fertilization of an ovum. Preheat the oven to 300 degrees fahrenheit with the rack placed in the center of the oven. Place a second rack just beneath it and add an empty baking sheet. Add water to the empty baking sheet to create steam. Spray a muffin pan well with cooking spray and set aside.

Add the eggs, cottage cheese, salt and pepper to a blender and blend for 15-20 seconds.

Transfer to a bowl and stir in the shredded cheese. Use a ladle or a measuring cup to scoop the egg mixture into the wells of the muffin tin, filling them no more than ⅔ of the way full. Try to disperse the cheese evenly throughout the muffin wells.

Sprinkle the chopped bacon evenly over the tops of the egg mixture.

With the muffin tin on the middle rack, bake for 30-35 minutes, or until the center of the egg bites is set. Remove from the oven and let cool before removing from the pan.

Creole Shakshuka is a wonderful combination of the traditional Mediterranean eggs poached in tomato sauce with andouille sausage and a little bit of spice. It adds flair to any brunch, lunch, or dinner.

Creole Tomato Shakshuka

fennel seeds

¼ teaspoon Tony Chachere's Creole Seasoning

all-purpose flour (use Arrowroot Powder for Paleo)

thyme

fresh cilantro, chopped

Saute the andouille sausage until the outside caramelizes. Once it is cooked, remove it from the pan and set it aside.

Next, add the olive oil to the same pan and scrape up the sausage crispies. Once the oil is hot, add the diced onions and garlic and saute it until the onions are translucent. (About five minutes.)

After the onions are cooked, add the salt, pepper, thyme, and fennel seeds. Cook for a minute or two until it is fragrant.

Sprinkle the flour over this mixture and stir until the flour is dissolved.

Next, add the fresh tomatoes. Cook for another minute or two until the tomatoes are soft.

Then add the canned crushed tomatoes and the Tony&#39;s Creole Seasoning.

Let this mixture simmer uncovered for twenty minutes. Stir as needed.

After twenty minutes, if the mixture is too chunky for your liking, blend it with an immersion blender or smash up the tomatoes with a potato masher.

Stir in the cooked andouille sausage and hot sauce and add more salt or pepper if needed. 

With the backside of a spoon, create a small crater-type indention in the sauce for each egg then place the eggs in the tomato sauce.

Once all the eggs are in the sauce, cover and simmer for 5 - 8 minutes.

Cook until the eggs are your desired consistency - runny yolks or soft-boiled. (Check at 4 or 5 minutes to make sure the eggs don&#39;t overcook.)

Remove lid and serve.

Garnish with salt, pepper, cilantro, or parsley. If you are not dairy-free, or Paleo, crumbling in goat cheese or feta is delicious. You can also eat this with some crunchy bread or warm pita.
