eggs (room temperature)

vanilla

Preheat oven to 350°F.

Lightly spray a 9 1/2 in pie pan with nonstick spray.

Place unbaked pie crust in pie pan, pressing dough against the sides of the pie pan.

Beat together sugar, eggs, nutmeg and vanilla. Add milk and whisk until smooth.

Pour mixture into pie shell.

Sprinkle the nutmeg lightly on top of the custard.

Bake for 1 hour and 15 minutes or until set.

Custard pie is an old fashioned, southern dessert that people have been making for nearly 200 years. With eggs and milk being the main ingredient to make a custard filling – and nutmeg sprinkled on top – this pie is smooth, silky and ridiculously rich. It’s always a big hit with guests!

Eggs (beaten)

Sugar

Salt

tsp Vanilla extract

Egg white (beaten for an egg wash)

Pie shell (pre-made)

Milk (scalded)

Nutmeg

Preheat your oven to 400° F. Combine the egg, sugar, salt, and vanilla in a large mixing bowl.  Pour the milk in with the other ingredients and whisk to combine. If using scalded milk, be sure it has cooled before adding.

Use a pastry brush to coat the inside of the pie shell with the egg wash. pour the filling into the prepared shell and sprinkle the nutmeg on top, using a fine-mesh strainer

Bake for 40 to 50 minutes until the edges of the pie are firm and the center jiggles a bit Allow to cool on a cooling rack and then refrigerate before serving.

If using a frozen pie crust, allow it to thaw at room temperature according to its package directions.

Prick the crust all over with the tines of a fork.

Brush thoroughly with beaten egg white. This helps prevent the crust from becoming soggy.

Set the crust aside.

Preheat the oven to 400 degrees.

In a medium bowl, add the beaten eggs, sugar, salt, and vanilla. Beat together.

Using a wire whisk, add the milk.

Place the prepared pie crust on a baking sheet.

Pour the egg and milk mixture into the pie crust filling baking cups with any excess mixture.

Sprinkle the top with nutmeg.

Bake for 30-35 minutes or until a knife inserted near the center comes out clean.

Remove from the oven and transfer to a cooling rack.

May be served either cold or at room temperature.
