Egg White Muffins | Healthy Breakfast Meal Prep

baby spinach, (chopped)

diced bell peppers

baby tomatoes, (diced)

egg whites

cottage cheese

salt

black pepper

garlic powder

Pre-heat oven to 300ºF.

Coat a 12-cup muffin tray with cooking spray.

Combine all prepared veggies in a medium mixing bowl and then evenly divide the veggie mixture amongst the 12 muffin cups.

Combine egg whites, cottage cheese, salt, pepper and garlic powder in a blender and blend until light and frothy.

Pour the egg mixture over the veggies, again, doing your best to divide the eggs as evenly as possible amongst all 12 muffin cups.

Place tray in the oven and bake for 25 minutes or until the eggs have fluffed up and are cooked through.

Cool before removing from the pan.  They should pop out easily if you greased your pan really well.

Serve immediately or pop into the fridge or freezer.   To re-heat, microwave the muffins for 45-60 seconds or until thawed.  Enjoy!

These egg white muffins are full of protein and veggies. They are great for Whole30, 21-Day Fix or Paleo diets. Less than 50 calories.

Egg White Muffins Recipe

turkey sausage ((or bacon/diced ham))

bell peppers ((chopped))

spinach ((chopped))

cherry tomatoes ((diced))

onion ((chopped))

tsp kosher salt

tsp black pepper

Preheat oven to 350°F. Generously spray a non-stick or silicone muffin tin with nonstick cooking spray.

Heat olive oil into a a non-stick frying pan over medium-high heat. Add the bell pepper and onion and saute for 2 to 3 minutes. Stir in the meat, spinach and tomatoes and cook an additional 2 minutes. Place 1 heaping Tablespoon into each muffin cup.

Next whisk the egg whites into a medium-sized bowl. Stir in the salt and pepper. Then pour over the meat mixture in the muffin tin, leaving 1/4″ from the top.

Cook for 23 to 30 minutes, or until the egg has puffed and comes clean with a toothpick. Run a knife around the edges to pop the egg muffins out. Enjoy while hot. Add some extra tomatoes, a little salsa or hot sauce for a kick if desired.

Store in an airtight container in the refrigerator. Eat within 5 days.

Egg White Muffins with Turkey Bacon, Cottage Cheese, and Veggies

extra virgin olive oil

carton egg whites

cheese

seasoning salt (like adobo)

shallots onion

scallions

medium orange or red bell pepper (chopped)

broccoli

Applegate uncured turkey bacon (cut in half (from 1 8 oz package))

cheddar cheese

olive oil spray

Preheat the oven to 350F. Spray a nonstick 12 cup muffin tin VERY generously with oil so the eggs don&#39;t stick.

Sautéed the shallots, scallions and bell pepper in oil over medium-low heat, cook until tender, 5 to 6 minutes.

Add the broccoli and cook 1 more minute.

Meanwhile, in a large bowl combine the egg whites, cottage cheese, garlic powder and seasoning salt.

Add the veggies and mix.

Using 12 cup muffin tin, line each cup with a half slice turkey bacon around the edges and pour in the egg mixture, about 1/3 cup each.

Top with the shredded cheese and bake in the center of the oven about 25 minutes, until set.
