Healthy Mac and Cheese {One Pot - 15 Minutes}

whole wheat elbow macaroni (uncooked)

broth

milk

butter

garlic powder

mustard (condiment)

salt

black pepper (to taste)

marble or cheddar cheese (shredded)

Parmesan cheese (shredded)

In a medium pot, add broth, milk, butter, garlic powder, mustard, salt, ground black pepper and bring to a boil.

Add elbow macaroni and cook for 8-10 minutes, stirring every few minutes to prevent sticking. Cook until al dente or desired firmness and adding more milk or broth if you wish.

Turn off heat. Add marble cheese and Parmesan cheese in portions and stir between each until melted. That's it.

Serve immediately as mac and cheese tastes best fresh. Saucy, creamy and so comforting!

Top with your favorite hot sauce, everything bagel, Montreal steak spice, paprika, nutmeg, soy sauce and even honey. Or with leftover chopped bacon. I like to bake mine at 425 degrees F for 20 minutes. Way less mess.

Healthy Mac and Cheese

Macaroni and cheese may seem an easy proposition. Noodles, cheese. But the secret to this creamy dish with a crunchy and crisp top is American cheese. This is no place for fancy cheeses or fancy noodles. Leave the whole-wheat penne and artisanal orecchiette in the cupboard and bring on the elbow pasta.

Baked Macaroni and Cheese

extra-sharp cheddar cheese, coarsely grated

American cheese

elbow pasta, boiled

cayenne (optional)

Salt

whole milk.

Heat oven to 375 degrees. Use one tablespoon butter to thickly grease a 9-by-13-inch baking dish. Combine grated cheeses and set aside two heaping cups for topping.

In a large bowl, toss together the pasta, cheeses, cayenne (if using) and salt to taste. Place in prepared pan and evenly pour milk over surface. Sprinkle reserved cheese on top, dot with remaining butter and bake, uncovered, 45 minutes. Raise heat to 400 degrees and bake 15 to 20 minutes more, until crusty on top and bottom.

Roasted Vegetable Mac and Cheese

carrots,

corn

broccoli florets,

Salt and pepper,

half-and-half

oz Colby Jack cheese, shredded

Preheat oven to 425° F.

In a large bowl, mix together carrots, corn, and broccoli. Add melted Garlic Butter and toss to coat evenly. Spread vegetables out onto a greased baking sheet. Season with salt and pepper to taste.

Roast vegetables at 425° for 12 minutes.

Meanwhile, bring a pot of water to a boil, and cook macaroni according to package directions.

Then, start the sauce. In a large saucepan, mix together half and half, milk, American cheese, and Colby Jack cheese over medium heat. Stir until cheese is melted and mixture is thickened and creamy.

Add cooked pasta and vegetables, and stir to combine.

Serve.

Preheat oven to 350.  Spray 9x13 pan with cooking spray. Put cooked macaroni in 9x13 pan.

In a medium saucepan, over medium heat, melt butter. When butter has melted whisk in flour and cook about 30 seconds, whisking continuously.

Slowly whisk in milk and heavy cream

Add in cheese and stir until melted and creamy.

Add salt and pepper to taste

Pour cheese mixture evenly over macaroni.

In a small bowl combine bread crumbs and paprika. Sprinkle over macaroni

Lightly Spray bread crumb topping with cooking spray oil, this will help it stay crispy

Bake at 350 for about 20 minutes until the macaroni and cheese is bubbling and the topping is golden brown.

Serve warm!

Baked Mac and Cheese

Think Stouffer's without the freezer. While it can be enjoyed straight from the pot, this macaroni and cheese has a slightly looser sauce than the stovetop variety to allow for thickening in the oven. Bread crumbs, while optional, make it truly spectacular.

Classic Baked Macaroni and Cheese

elbows, shells, cavatappi, farfalle, fusilli or other short, tube-shaped pasta

Kosher salt

unsalted butter

all-purpose flour

garlic,

pepper

fontina

bread crumbs

Parmesan cheese (optional)

salt and pepper

Cook pasta in a large pot of salted boiling water until it’s barely al dente. (It should be more al dente than your average pasta: It’s going to continue to cook in the oven.) Drain and set aside.

Meanwhile, heat butter in a medium pot over medium heat. (The pot should be large enough to hold all the pasta when cooked.) Whisk in flour and cook, whisking constantly, until the flour is foamy and just starting to turn a light golden brown, about 4 minutes. Slowly whisk in milk to avoid clumping. Add garlic, paprika and season with salt and pepper. Bring to a simmer, whisking constantly and paying special attention to the edges of the pot to make sure the flour mixture is totally incorporated.

Add grated cheese and whisk to blend until the cheese is completely melted. (The sauce will seem thick at first and thin out as the cheese melts; it will thicken while it bakes.) Season with salt and pepper and add cooked pasta, stirring to coat well.

Heat oven to 425 degrees. Line a rimmed baking sheet with aluminum foil (to catch any cheesy drips).

Make the optional topping: Combine bread crumbs, melted butter and Parmesan, if using, in a medium bowl. Season with salt and pepper and, using your hands, mix well to ensure the bread crumbs are evenly coated.

Transfer the macaroni and cheese mixture to a 3-quart or 9 x 13 baking dish and scatter bread crumbs, if using, evenly over the top. Place on prepared baking sheet and bake until macaroni and cheese is bubbling, thickened and creamy, and bread crumbs are evenly golden brown, 25 to 30 minutes. Let cool slightly before serving.

Smoked Cheddar cheese (shredded & divided)

Preheat oven to 350 F.

Butter an 8x10 casserole dish. Set aside.

Bring a large pot of seasoned water to a boil. (I season my water generously with salt, pepper, and garlic powder. It should taste a bit salty)

Cook pasta until a little under al dente ( about 7 minutes)

Drain and set aside.

In a large saucepan, over medium heat, melt butter.

Whisk in flour and continue stirring until golden.

Slowly whisk in half n half.

Continue stirring until smooth.

Stir in 1 cup Colby Jack cheese until sauce is creamy.

Pour cheese sauce over macaroni, tossing to coat.

Pour macaroni into prepared pan. Set aside.

In a large bowl, add milk, 2 cups Colby Jack cheese, and 1/4 cup Smoked Cheddar.

Taste mixture and add salt and pepper until the mixture tastes seasoned to your liking.

Add in eggs and stir well to make sure the eggs are mixed in.

Pour egg mixture over the macaroni. (Use a spatula to help push the mixture throughout so that everything isn't just sitting on top). (see note)

Sprinkle the top with remaining cheeses. (I never need all of it)

Bake for 30-35 minutes. (may not need this long so check on it at the 25-minute mark)

Let sit for 10 minutes before serving.

Creamy Baked Macaroni & Cheese

This classic Macaroni Salad Recipe is creamy, delicious, and super easy to make. Made with classic ingredients, including cooked elbow macaroni, hard-boiled eggs, crunchy celery, onions, and pickles, and dressed in a light and creamy mayo-based dressing, this fantastic pasta salad is the perfect summertime side dish for bbq’s, picnics, and potlucks!

Macaroni Salad

mayonnaise

pickle juice

yellow mustard

black pepper (plus more to taste)

celery (diced)

onion

pickles (diced)

elbow macaroni pasta (or other small pasta)

eggs (roughly chopped)

In a large bowl, combine the mayonnaise, pickle juice, mustard, salt, and black pepper.

Mix in the celery, onion, and pickles until combined. Set aside.

Bring a large pot of salted water to a boil. Cook the macaroni according to package directions until al dente, then drain and rinse with cold water.

Gently stir the cooked macaroni into the creamy dressing and mix until everything is evenly coated. Fold in the eggs.

Optional, but recommended - Cover the macaroni salad and transfer it to the refrigerator for at least one hour. This will allow the flavors to blend and the mayo dressing to permeate the pasta.

Just before serving, stir and season with additional salt and black pepper, to taste. Garnish with fresh parsley or paprika, if desired.

Classic Macaroni and Cheese

white or wheat hearty sandwich bread (torn into rough pieces)

Monterey Jack cheese (shredded (2 cups))

sharp cheddar cheese (shredded (2 cups))

For the bread crumbs, pulse bread and butter in food processor until crumbs and butter are well combined and crumbs are fine. Set aside.

For the pasta and cheese, bring 4 quarts water to boil in a large pot or Dutch oven over high heat. Add macaroni and 1 tablespoon salt; cook until pasta is tender, about 1 minute past the al dente stage. Drain pasta and set aside in colander.

Adjust a rack in the oven to middle or lower-middle position and preheat the broiler.

In now-empty Dutch oven or pot, heat butter over medium heat until foaming. Add flour, mustard, and cayenne (if using) and whisk well to combine. Continue whisking until mixture becomes fragrant and deepens in color, about 1 minute. Gradually whisk in milk; bring mixture to boil, whisking constantly (mixture must reach full boil to fully thicken). Reduce heat to medium and simmer, whisking occasionally, until thickened to consistency of heavy cream, about 5 minutes.

Off heat, whisk in cheeses, a handful at a time, and 1 teaspoon salt until cheeses are fully melted. Add pasta and cook over medium-low heat, stirring constantly, until mixture is steaming and heated through, about 6 minutes.

Transfer mixture to broiler-safe 9-by 13-inch baking dish and sprinkle evenly with bread crumbs. Broil until crumbs are deep golden brown, 3 to 5 minutes, rotating pan if necessary for even browning. Watch carefully so the crumbs don't burn! Cool about 5 minutes. Serve.

Quick & Easy Sopa de Coditos

Roma tomatoes

white onion, quartered

1-2 chipotles in adobo, seeded

olive oil

carrot,

celery, diced

vegetable broth

cilantro

½ medium zucchini, diced

Lime wedges

Avocado cubes

Hot sauce

Corn tortillas

Vegan queso fresco

Add tomatoes, onions, garlic, chipotles in adobo, and 1 cup of broth to a blender. Mix on high until smooth, then set aside.

Heat olive oil in a stockpot over medium. Add the macaroni in and toast, stirring constantly, until fragrant and golden brown.

Add the carrots and celery, cooking for another 3-4 minutes. Transfer the tomato mixture to the pot and season for another 5 minutes, then pour in the rest of the broth and cilantro sprigs.

Bring everything to a boil, then turn the heat down and simmer the soup for 8-10 minutes. Add the zucchini and simmer for another 5 minutes until the pasta and vegetables are tender.

Taste and season it with salt and pepper to your preference, then serve immediately with a squeeze of lime, cilantro, hot sauce, corn tortillas, etc. Happy eating!
