For thyme syrup:

sugar

water

lemon thyme leaves (or regular fresh thyme leaves)

For the cocktail:

St Germain Elderflower Liqueur

thyme syrup

lemon juice

sparkling wine

thyme

For the syrup: Bring sugar and water to a boil in a small saucepan, stirring until sugar dissolves. Remove from heat, add thyme leaves, cover and let stand 1 hour. Strain and refrigerate. 

For the cocktail: Fill mixing glass with ice, add gin, St Germain, thyme syrup, and lemon juice. Stir until cold. Strain into flute, top with sparkling wine and garnish with thyme sprig.

.75 oz green Chartreuse

.75 oz fresh squeezed lime juice

orange bitters

Make this delicious elderflower liqueur when fresh elderflowers are in season!

Elderflower Liqueur

20-30 fresh elderflowers

vodka

lemon

honey (or sugar (optional))

Cut the elderflowers off the stem into a quart sized jar until it is almost full.

Pour the bottle of vodka over the elderflowers, then top with the slices of lemon to keep the flowers under the vodka.

Cover the jar with a lid and put it in a cool and dark place for 2-4 weeks.

Strain out the elderflowers with a fine mesh sieve, then add the optional honey or sugar and stir well or shake to combine.

It can be consumed right away or aged longer if desired. It will keep indefinitely.
