Esquites is a tasty corn salad topped with chili and cotija cheese. It&#039;s incredibly delicious,  easy to whip up, and makes a perfect side!

Esquites Recipe

mayonnaise

Mexican Crema (or sour cream)

garlic salt (with parsley flakes)

lime juice

(two 12 oz bags) oz frozen corn

salted butter

cotija cheese

chili powder (to taste)

cilantro (for garnish)

lime

In a small bowl, combine mayo, crema, garlic salt, and lime juice. Set aside.

In a medium pot, bring 1 c. of water to a boil. Once boiling, add corn and cover. Bring back to a simmer and cook for about 4-5 minutes or until the corn is cooked through.

Drain water and return the corn to a pan and cook until a few pieces are a little browned/charred. Add butter and the mayo-crema mixture and cook until combined.

Divide into cups and top with cotijja, chili powder, and cilantro. Serve warm.

Serves 4-6.

Mix together mayonnaise and crema until smooth. Season with salt and pepper to taste.

Heat oil in a large nonstick skillet. Saute corn in large skillet for 6-8 minutes, until cooked through and slightly charred.

Put corn into cups or a serving bowl and drizzle with mayo mixture. Top with cotija cheese and cilantro.

Squeeze lime juice and finish with tajin to taste.

This has quickly become a favorite side dish for taco night, burritos, etc.! So yummy.

Add butter to a skillet over medium heat. Once melted, add onion and pepper then sauté until tender. Add water and corn. Cover and cook, stirring occasionally, until corn is tender (about 5-8 minutes).

Season with black pepper and a little salt then divide among 4 cups.

In each cup, add 1 heaping teaspoon of mayonnaise and 1 heaping teaspoon of Mexican crema (or sour cream). Stir to combine.

Sprinkle generously with grated cheese and chili powder, to taste. Serve with lime wedges to squeeze on top. Enjoy immediately.

Tasty corn kernels served in a cup. This easy and quick recipe is popular all over Mexico. The Kernels are golden brown and smoky. Then, add in some mayonnaise, cheese, and plenty of seasoning...you&#39;ve just made one of my favorite dishes of all time: esquite!

cut corn kernels (about 4 corn ears)

sour cream

unsalted butter

white onion

epazote

serrano pepper (OPTIONAL)

queso

chili powder or cayenne pepper (for topping)

Lime wedges (optional)

Salt

In medium-high heat, melt the butter in a skillet. Once melted, add the chopped onion and cook until transparent.

Add corn, epazote (if using), serrano pepper, and ⅓ water. Stir and cover to cook, stirring occasionally. It will take between 6-8 minutes to cook. Check for doneness and do not overcook; corn kernels should be firm.

Season with salt and serve in 4 cups. Top with cream and/or mayonnaise and cheese. If you don’t want to use the serrano peppers and use cayenne or chili powder instead, add it with some lime juice.
