Basic Meatloaf with Creamy Tomato Sauce

container Sensations by Compliments Tuscan Tomato & Basil Bisque, divided 625 mL

lb lean ground beef 500 g

egg, lightly beaten

panko breadcrumbs 175 mL

tbsp finely chopped onion 30 mL

salt and pepper 2 mL

Preheat oven to 350°F (180°C). In a large bowl, mix together the ground beef and ¾ cup (175 mL) of the tomato bisque. Next add the egg, breadcrumbs, onion, salt and pepper and mix by hand until just combined, being careful not to over mix.

Add beef mixture to a greased 9 x 5-in. (23 x 13-cm.) loaf pan.  Cover with aluminum foil and bake 45 min., or until meatloaf reaches an internal temperature of 160°F (71°C).

Simmer remaining tomato bisque in saucepan and drizzle over sliced meatloaf to serve.

“Crisper” Chopped Salad with Tahini Dressing

lemon juice 60 mL

olive oil 30 mL

tbsp tahini paste 30 mL

garlic,

tsp each ground cumin and salt 2 mL

grape tomatoes 250 mL

chickpeas, drained and rinsed 540 mL

tsp za’atar seasoning (optional) 10 mL

pita breads, toasted and cut into triangles

Whisk together lemon juice, oil, tahini paste, garlic, cumin and salt. Toss with chopped "crisper" vegetables, tomatoes and chickpeas.  

Sprinkle salad with za’atar seasoning, if using. Serve with toasted pita triangles.

Chicken, red pepper & almond traybake

boneless, skinless chicken thigh

red onions

small red potato

red peppers

garlic

tsp each ground cumin, smoked paprika and fennel seeds

olive oil

lemon

whole blanched almond

tub 0% Greek yogurt

parsley

Heat oven to 200C/180C fan/gas 6. Place the chicken, onions, potatoes and peppers in a large bowl and season. in another bowl, mix together the garlic, spices, oil, and lemon zest and juice. Pour this over everything and spread the mixture between 2 baking trays.

Roast for 40 mins, turning over after 20 mins, until the chicken is cooked through. Add the almonds for the final 8 mins of cooking. Serve in bowls with a big dollop of Greek yogurt and some chopped parsley or coriander.
