This Everything Bagel Vegan Mac and Cheese is the best easy family dinner recipe for inspiring more Meatless Mondays in your family.

Baked Vegan Mac and Cheese with Everything Bagel Crust

tbsp extra virgin olive oil

onions (thinly sliced)

garlic (minced)

cashews (soaked)

salt vegetable broth

lemon juice

salt

375 g box of whole grain penne pasta (use gluten free if needed)

vegan cheese shreds

tsp poppyseeds

tsp sesame seeds

tsp garlic flakes

tsp onion flakes

tsp kosher salt

panko breadcrumbs

vegan butter (melted)

Preheat oven to 400 F.

To a large nonstick skillet, heat the olive oil over medium low heat. Add the onion and garlic and cook until fragrant and caramelized, about 45-60 minutes.

Meanwhile, to a high speed blender, puree the cashews, broth, lemon juice, salt, nutritional yeast and turmeric until very smooth.

Meanwhile, cook the whole grain pasta for 2 minutes less than the recommending cooking time on the package.

Add the pasta and sauce to the skillet with the caramelized onions and toss to coat.

In a bowl, mix together the poppyseed, sesame seeds, garlic flakes, onion flakes and kosher salt.

In another bowl, mix the vegan butter and panko.

To a 9 inch square or round oven-safe dish, layer half of the pasta and top with 1 cup of the vegan shreds. Add the remaining pasta.

Top with the remaining 1 cup of vegan cheese shreds, the panko breadcrumbs and the everything bagel spice. Bake for 10-15 minutes on the top shelf until browned. Serve immediately.

Whisk all of the seasoning ingredients in a bowl and set aside.

Seasoning

Preheat the oven to 375F and grease a round 8-inch metal baking pan. Set a small ovenproof ramekin upside down in the center and grease the sides of the ramekin as well.

In a medium bowl, whisk together the almond flour, coconut flour, whey protein, baking powder, and garlic powder.

In a large microwave safe bowl, melt the cheese on high in 30 second increments until well melted and you can stir it together.

Working quickly, cover the cheese with the almond flour  mixture, and add the eggs and sour cream. Use a silicone spatula to stir everything together, kneading the mixture hard against the side of the bowl with the spatula until mostly uniform.

Dough

Use wet hands to roll the dough into scant 1-inch balls, and place them in the prepared baking pan. Once there is a single layer of balls, brush them with some of the melted butter and sprinkle with seasoning.

Continue adding dough balls until all the dough is gone. Brush the top with melted butter and sprinkle with more seasoning. (You can reserve a bit of butter and seasoning for after they come out of the oven).

Bake 20 to 30 minutes, until the bread is golden brown and the top is just firm to the touch. Remove and let cool at least 20 minutes. Brush with any additional melted butter and sprinkle with remaining seasoning.

Loosen the ramekin in the center and remove. You can use the hole in the center to add another ramekin filled with cream cheese or Boursin for dipping.

<ol><li>actually add the cheese which was in the video but not on the recipe</li><li>the eggs need to be slightly underdone when going into the mix.</li><li>more eggs - ratio felt off I think we may try 12</li><li>Less salt - it made it taste like a salted bagel but every bite was a little overpowering.</li></ol>

Keto Bagel Fat Bombs

Cream Cheese (softened)

Chives (chopped)

Dill

White Pepper (ground)

Smoked Salmon (chopped)

Salt (to taste)

Everything Seasoning

Place the cream cheese into a mixing bowl and beat with a hand mixer.

Add the chives, dill, and pepper. Beat for 1-2 minutes on medium speed until smooth and fluffy.

Add the smoked salmon and mix well.

Taste and add salt, if needed.

Use a cookie scoop to measure out bite-sized balls, place them onto a lined cookie sheet and chill for 30 minutes.

Place the everything seasoning onto a plate.

One at a time, quickly roll the fat bombs into a round shape, then roll into the seasoning mix. Gently roll in your hands to stick the seasoning onto the balls.

Enjoy immediately or chill until needed.

This recipe came from one of my YouTube subscribers, Sissy Can Do It.  This recipe is for a 4 waffle maker, such as the Dash No Mess.  Because the size of the waffles is bigger in a 4 waffle maker, you will need to use a little less than 1/4 of this recipe per chaffle if you are using a Dash mini.  Also, I found that the quantity of "Everything but the Bagel" seasoning used in the original recipe comes on a little strong if you are just using this as bread, so I dialed it back to 1/2 tablespoon.  If you're putting cream cheese on this chaffle, it will bring back memories of your bagel eating days.

These fluffy New York-Style bagels are simple to prepare, fun to make, and delicious to enjoy with tons of fillings and toppings! With just 6 ingredients, plus a vegan option, you can enjoy homemade bagels every day!

Homemade New York-Style Bagels

white bread flour

Tbsp maple syrup (or your sugar of choice)

g active dry yeast (or 28 g fresh yeast)

sugar (or malt barley syrup)

egg (for eggwash) (or plant-based milk

Prepare the yeast mixture by adding the yeast, warm water (between 40-46ºC/105-115ºF), and maple syrup to a bowl and mixing until the yeast has dissolved completely. Then set aside to activate for five minutes - during this time, it should bubble up and become slightly frothy.

Step 1: Activate the yeast

Mix the flour, yeast mixture, and salt. Then knead the dough until it becomes smooth and elastic. If you find that the dough is a little dry, you may need to add a tiny bit more*.Once kneaded, form the dough into a large ball by folding over the edges to the underside, creating a smooth round top.

Step 2: Mix the dough

Lightly oil the outside of the dough with your hands and place in an oiled bowl, cover the bowl with some clingfilm (or a kitchen towel), and then set aside for it to rest for 1 hour (or read the recipe notes for a longer cold-rest option) in a warm area (such as inside your switched off oven).

Step 3: Rest the dough

Once rested, the dough should have risen to double its' size. At this point, you need to deflate it with a light kneading just for 30 seconds or so.

Once ready, divide the dough into 13 pieces. For perfectly uniform bagels, you can weigh each piece with a scale, and they should be around 100g each (3.5oz) or whatever the weight of your dough ball is divided by 13.

Roll each piece into a ball. Place any finished ball onto a kitchen towel covered tray. Once they are all ready, set the tray aside for 10-15 minutes to rest once more.

Step 4: Divide the dough

There are several methods you can use to shape the bagels. Some roll the dough into long ropes and press the ends together. However, I find It easier to shape the bagel shape and then press a finger/thumb into the center to create a hole and spin it lightly.If you want a more pronounced bagel hole, then you can spin the bagel lightly around your finger/s (as the hole will get smaller during the rest of the making process and can close up if you&#039;re not careful).Once shaped, set the bagels back below the kitchen towel and leave for a further 10 minutes.

Step 5: Shape the bagels

While the bagels rest, bring a large pot of water and the cane sugar to a boil, mixing well, so the sugar is fully dissolved. Once it begins to boil, reduce the heat to a simmer. **

Once the bagels have rested, gently lower them into the simmering water with a skimmer/slotted spoon. Make sure to do just a few simultaneously, not overcrowding the pan (as they increase in size while boiling). Then poach for 20 seconds on each side.***

Place the poached bagels onto a prepared baking tray (lightly oil or cover with parchment paper), leaving at least an inch between them.

Step 6: Boil the bagels

Brush the bagels with the egg wash (or plant-based milk or oil for vegan bagels), and sprinkle with your topping of choice. I used a combination of seeds on their own and everything bagel seasoning for my batch.

Step 7: Add the toppings

Bake in the oven at 240ºC/475ºF bake for 10 minutes. Then spin the tray, so the front bagels are now at the back of the oven, and bake for a further 6-10 minutes until they are uniformly golden brown.Once ready, allow them to cool slightly, and then they are ready to enjoy!

Step 8: Bake the bagels

This Curry Chicken Salad is super clean and SO delicious. Loaded with spiced chicken, golden raisins, pistachios, herbs, and Greek yogurt + olive oil as a stand-in for mayo.
