This easy recipe for roasted fall vegetables is packed with flavor and flexible to be changed up with your seasonal favorites.

Balsamic Roasted Fall Vegetables

Carrots (, peeled and halved vertically)

Brussels Sprouts (, stems trimmed and halved vertically)

Butternut Squash (, peeled and

extra virgin olive oil

Balsamic Vinegar

Sumac

Kosher Salt

Preheat the oven to 400 degrees F.

In a large bowl combine the olive oil, balsamic vinegar and sumac.  Add the prepared vegetables and toss to fully coat with the liquid.  Rub any remaining liquid into the vegetables by hand (be careful of the beets as they can stain clothing) especially the carrots which are more difficult to coat when in longer form.

Place vegetables on a large baking sheet or roasting pan and sprinkle the salt over them.  Flip the vegetables halfway through cooking.  Cook until done but still firm (not mushy), about 30 minutes.  Serve immediately.

This savory-sweet squash dish might not be traditional Thanksgiving fare, but the combination of different spice notes from cinnamon and Dijon mustard will soon become a staple at the holiday table.

Pour cider into 13-inch by 9-inch baking dish; add squash, rounded sides down, to dish. Season with 1/4 teaspoon salt and 1/8 teaspoon freshly ground black pepper. Cover with foil; bake 30 minutes or until just tender.

Meanwhile, in medium bowl, mix marmalade, mustard, margarine, cinnamon, and 1/4 teaspoon salt until smooth.

Reset oven to 425 degrees F. Uncover squash; brush on mustard mixture. Roast 30 minutes or until browned. Transfer to platter; pour pan juices over all.

Its fun and very entertaining to cook everything on the grill for a grilling party. From everything I literally mean everything from appetizers to dessert. You can even make fun and easy desserts in foil on the grill which I will share in few days but today we are making an easy vegetarian side. And when you grill fall favorite vegetable like zucchini with some cherry tomatoes for sweetness and caper berries for salty briny taste, your party crowd will enjoy fresh fall flavors and you will enjoy entertaining them. <br/> <br/>I am sharing with you an easy vegetarian side recipe for grilling in foil. Just slice, wrap and forget, when your guest arrive, take the packages out of fridge, let'em come to room temperature. Simply grill'em on little less hot area of the grill for 10 minutes and let your guests season and enjoy fresh grilled veggies with whatever meats you are grilling. And guess what, clean up will be easy too, just trash the used foils and your are done.

Zucchini and Peppers Grilled In a Foil

Zucchini,

Cup Cherry Tomatoes

Bell Pepper, 1 yellow bell pepper

6-8 Capers, Caper Berries

Salt and Black Pepper, salt and pepper

Lemon juice

tbsp Olive Oil

Slice - Slice zucchini, bell pepper into bite size pieces. Divide veggies among two square sheet of aluminum foil, top with ½ of cherry tomatoes on each. Drizzle ½ tbsp. oil, pinch of salt and black pepper and few caper berries.

Seal - Seal the foil to make small purses. This is a perfect make ahead and no utensil vegetarian recipe. You can refrigerate these purses to grill’em in the evening or take’em outdoor or pre-prep for individual serving for grilling party.

Grill and Serve - Just before serving, grill purses for 10 minutes, watch your face from escaping steam when you open’em. Season with little more salt, pepper and ½ tbsp. lemon juice and serve.
