Veggie packed chilli con carne

olive oil

onion (diced)

garlic (minced)

tin of black beans (drained and rinsed)

Coriander

Add the olive oil to a deep lidded frypan over medium heat (I love this pan from RACO SmartRelease).

Fry the onion and garlic until they start to soften.

Add the capsicum and fry for 2 minutes.

Add the beef mince and brown quickly.

Add all the herbs and spices and mix through well to coat the beef and veggies.

Add the beef stock powder (this helps to add flavour).

Add the zucchini and carrot and mix through.

Add the tomato passata and the crushed tomatoes and stir well to combine.

Add the water and the black beans.

Put a lid on the pan and cook for 1 hour.

Remove the lid and stir through the frozen corn.

Cook for 10 minutes more so the sauce can thicken and become super thick and glossy.

A gnocchi bake is a super comforting and easy one-pan family dinner. A bit like a pasta bake just using a bag of gnocchi and some veggies straight out of the freezer.

The great thing about only using one pan is you hardly have to wash up!

Blanch the sugar snap peas in a bowl of boiling water for 2 mins, then drain. Heat the oil in a large frying pan. Add the spring onions, garlic, ginger and chicken. Gently fry for 2-3 mins. Stir in the curry paste and cook for 1 minute more. Add the coconut milk to the pan, along with a splash of water, the lime juice, peas and sugar snap peas. Gently bubble for around 5 mins until the chicken is cooked through.

Meanwhile, cook the noodles according to the pack instructions. Drain. Stir the noodles through the sauce, scatter with coriander and serve with a wedge of lime for squeezing over.

In a large skillet or wok, heat the coconut oil over medium heat. Add the ground beef and cook until browned and no longer pink, breaking up as it cooks. Drain excess grease, if desired.

Add the garlic, ginger, and red pepper flakes and saute for a minute or two.

Stir in the soy sauce or tamari, rice vinegar, and sesame oil.

Add the coleslaw mix and stir in until heated through and slightly wilted, which should take just another three or four minutes.

Spoon into bowls and serve with sriracha hot sauce and sliced scallions, if desired.

Preheat the oven to 375°F.

Spray a baking sheet with cooking spray and set aside.

Open the can of crescent rolls and separate the dough into triangles.

At the widest end of the triangle piece, place a hot dog length-wise and roll it up in the dough. Place each roll up on the baking sheet.

In a small bowl, combine egg and water. Brush egg wash over the tops of the rolls. Sprinkle with sesame seeds and press gently into rolls.
