chicken thigh fillets (skin on)

olive oil

garlic cloves, thinly sliced

(300 grams) long-grain rice, rinsed, drained

(250 milliliters) milk

chicken stock

iceberg lettuce, sliced

Black Jack cheddar, coriander sprigs, radish wedges & lime wedges, to serve

tomatoes, seeds removed,

white onion, chopped

coriander, leaves picked, roughly chopped

(75 grams) pistachios, roughly chopped

Taco Bell Cheesy Fiesta Potatoes Recipe

Salt and pepper (to taste)

nacho cheese (warmed)

sour cream

Preheat the oven to 475 degrees F. In a ziplock bag add the cumin, garlic powder, salt, and pepper. Add the cubed potatoes, seal the bag and shake until the potatoes are coated evenly.

Heat butter and olive oil in a large skillet over medium heat. Add the seasoned potatoes and cook, stirring frequently, until they are golden brown on all sides, about 10 minutes. Cover and cook for an additional 10 minutes or until the potatoes are tender.

Transfer the potatoes to a non-stick baking sheet and bake at 475 degrees F for 10 minutes, turning occasionally until the potatoes are nice and crisp.

Remove from the oven and place into separate bowls and top with some nacho cheese and sour cream.

Fiesta Refried Beans

Place the dried chiles colorados in a small saucepan, cover with water, and bring to a simmer over medium-high heat. Reduce heat and simmer until softened and plumped, about 10 to 12 minutes.

In batches, puree the cooked beans and 2 cups of their cooking liquid, the rehydrated chiles and the chipotle chiles in adobo.

Heat the lard or oil in a large casserole or sauté pan set over medium heat. Once hot, add the bean puree, cook for about 15 minutes, stirring and scraping the bottom of the pan as it thickens. Stir in the cheese and continue to cook, stirring and scraping the bottom of the pan, until the beans have thickened into a soft puree and the cheese is completely incorporated and melted.

If adding chorizo, in a small pan set over medium-high heat, cook the chorizo or longaniza until brown and crisp, about 5 to 6 minutes. Top the beans with the chorizo or mix it in.

Taste and adjust seasoning. Serve hot.

Filipino Cassava Cake with Macapuno

16-oz packs frozen grated cassava (thawed)

coconut milk

condensed milk (divided)

tbsp brown sugar

unsalted butter (softened)

salt

Preheat

Preheat oven to 350F. Grease a 9x13 inch baking dish and set aside.

Stir

In a large bowl, stir all ingredients - but only half of the condensed milk - until combined. Smush the softened butter to the sides of the bowl to make sure it is incorporated.

Bake

Pour the batter into your prepared dish and bake for about 1 hour or until the edges start turning puffy and golden brown and the centre is set. It&#039;s okay if the top of your cake is still bubbling.

Spread

Carefully remove the cake from the oven - keep the oven on - and spread the rest of the condensed milk on top. Try to spread it as evenly as you can.

Broil

Continue to bake your cassava cake until the top is caramelized. You can also choose to broil on low for a few minutes to help with the caramelization. Just remember to watch your cake because broiling can easily burn it.

Cool

Remove from oven and allow to cool in baking dish before cutting into squares and serving. Best served warm.

Cassava cake with macapuno is a traditional Filipino dessert made of grated cassava, coconut milk, condensed milk and macapuno, which is soft, chewy coconut meat. Cassava cake is a popular merienda (snack) or dessert and is often served during special occasions like Christmas and fiestas.

Place corn in a bowl with oil, toss to coat; place corn on baking sheet and bake at 450 degrees for 18-20 minutes. Cool.

In a jar, combine salt, cumin, lime juice, oil and cider vinegar. Shake well.

In a large bowl, combine the cilantro, red onion, tomatoes, red bell pepper, garlic, black eyed peas and roasted corn. Stir in dressing and chill.

Before serving, add avocado.

This kiddie favorite dish combines the rich flavor of beef, vegetable aromatics and the creamy tomato sauce, topped with a generous amounts of cheese.

Baked Macaroni Recipe

pc onion, chopped

garlic, chopped

1⁄2 kg. lean ground beef

pc Knorr Beef Broth Cube, mashed

tbsp liver spread

kg store-bought spaghetti sauce

cheddar cheese

all purpose cream

½ kg macaroni, cooked al dente

black pepper,

mozzarella cheese, grated

Get your pan nice and hot over medium high heat. Pour some oil and throw in the onion and garlic. Add ground beef, cook until color changes before dropping the Knorr Beef Broth Cube. Once beef is cooked, add liver spread.

Pour the spaghetti sauce and bring to a boil. Reduce heat to a simmer until the sauce is thick.

You may now add the cheese at this point and simmer until the cheese melts and stir in the all-purpose cream for that creamy goodness.

Toss in the cooked macaroni, mix well with the sauce and just adjust the seasonings if necessary.

Transfer the pasta into a baking dish, top with grated mozzarella and bake in an oven or oven toaster until the cheese melts.
