A Filipino dipping sauce primarily made with vinegar and soy sauce. It&#x27;s tangy, a little bit salty with a hint of sweetness from sugar and raw onions.

Soy Sauce and Vinegar Dipping Sauce

cane vinegar (see note 1 for substitute)

soy sauce

tbsp brown sugar (or white, add more if preferred)

red onion (finely chopped)

garlic (finely chopped)

chilies

water (optional)

In a small bowl, combine all ingredients. Whisk until sugar is dissolved.

Let it stand for 20 to 30 minutes. Do a taste test. Add more sugar or soy sauce based on preference. Start with 1 tsp at a time. Note that water will help lessen the sourness of the sauce. You can omit if preferred.

fish sauce/ patis

brown sugar (packed, add more if preferred)

salt and pepper (to taste)

In a small bowl, add all ingredients. Whisk until sugar is dissolved.

Let it stand for 20 to 30 minutes. Do a taste test before serving and adjust sugar, water, salt, and black pepper, to taste. The water will help lessen the sourness. Omit if preferred.
