A crispy pie that you can adapt for your needs, add chicken or keep it veggie. A good fail-safe for your repertoire

Crispy Greek-style pie

bag spinach leaves

jar sundried tomato

feta cheese, crumbled

eggs

filo pastry

Put the spinach into a large <a href="https://www.bbcgoodfood.com/content/five-best-saucepans">pan</a>. Pour over a couple <a href="http://www.bbcgoodfood.com/content/kimberley-wilsons-top-five-measuring-sets">tbsp</a> water, then cook until just wilted. Tip into a sieve, leave to cool a little, then squeeze out any excess water and roughly chop. Roughly <a href="https://www.bbcgoodfood.com/content/top-five-paring-knives">chop</a> the tomatoes and put into a <a href="https://www.bbcgoodfood.com/content/top-five-mixing-bowls">bowl</a> along with the spinach, feta and eggs. Mix well.

Carefully unroll the filo pastry. Cover with some damp sheets of kitchen paper to stop it drying out. Take a sheet of pastry and <a href="http://www.bbcgoodfood.com/content/test-best-pastry-brushes">brush</a> liberally with some of the sundried tomato oil. Drape oil-side down in a 22cm loosebottomed cake tin so that some of the pastry hangs over the side. Brush oil on another piece of pastry and place in the tin, just a little further round. Keep placing the pastry pieces in the tin until you have roughly three layers, then spoon over the filling. Pull the sides into the middle, scrunch up and make sure the filling is covered. Brush with a little more oil.

Heat oven to 180C/fan 160C/gas 4. Cook the pie for 30 mins until the pastry is crisp and golden brown. Remove from the cake tin, slice into wedges and serve with salad.

Heat oven to 180C/160C fan/gas 4 and oil the inside of a 900g loaf tin. Tip the stuffing mix into a bowl, crumble in the stock cube and pour over 300ml boiling water. Give it a good stir, then set aside.

Stretch the bacon rashers a little by running the back of a spoon along their length, then use 6-7 to line the base and longest sides of the tin. Chop the rest.

Mix the chopped bacon and mince into the stuffing with some black pepper, then press into the bacon-lined tin and bake for 40 mins until firm. Turn out and serve sliced.

Ham & ricotta pizzas

x 150 grams large pizza bases

Heat oven to 220C/200C fan/gas 7. Place a flat baking sheet in the oven to heat up. Spread 2 tbsp tomato sauce on each pizza base. Carefully slide the bases onto the baking sheet and cook following pack instructions.

Five mins before the cooking time is up, scatter over the ham, dot the ricotta on top in spoonfuls and continue cooking. Season and drizzle the pesto over each pizza.

This chopped chicken salad is incredibly simple, yet so tasty, and only contains five ingredients.&nbsp; And there's a secret method to making this the easiest and quickest chicken salad ever!&nbsp;&nbsp;

Chopped Chicken Salad

1.5-2 lbs (454-681 grams) fully cooked boneless, skinless chicken

(180 grams) mayonnaise

(60 grams) sour cream ((Greek yogurt may be substituted))

1½ tsp Jane's Krazy Mixed Up Salt

Place chicken in the bowl of a stand mixer.  Pulse mixer on and off until chicken is finely chopped.  Alternatively, finely chop chicken and place in a large bowl.

Add mayo, sour cream, Jane&#39;s Krazy Mixed Up Salt, finely chopped celery, and pepper.  Blend very briefly until mixed thoroughly.  Taste and adjust seasonings if needed.  For best results, allow to chill in the refrigerator for at least one hour for flavors to blend.

Serve on greens, with gluten free crackers, or on gluten free bread or toast.  Keeps well in refrigerator in covered container for up to 4 days.
