How to Make a Flax Egg

Tbsp flaxseed meal ((ground raw flaxseed))

Add flaxseed meal and water to a dish and stir. Let rest for 5 minutes to thicken. Add to recipes in place of 1 egg (as original recipe is written).

It's not an exact 1:1 substitution in every recipe because it doesn't bind and stiffen during baking quite like an egg does. But I've found it to work incredibly well in pancakes, quick breads, brownies, muffins, cookies, and many other recipes.

Vegan Pumpkin Spice Loaf Bread

Coconut Flour

Tablespoons Pumpkin Spice Blend

Teaspoon Baking Soda

Teaspoon Baking Powder

Teaspoon Salt

Can Pumpkin

Flax Eggs

Tablespoons Agave

Tablespoon Coconut Oil, melted

Teaspoon Vanilla Extract

Preheat the oven 

Preheat oven to 375ºF and line a loaf tin with parchment paper.

Combine your ingredients

In a large bowl, combine coconut flour, pumpkin spice blend, baking soda, baking powder, and salt.


Whisk the ingredients

In a separate bowl, whisk together canned pumpkin, flax eggs, agave, coconut oil, and vanilla extract.


Pour batter

Fold wet ingredients into dry ingredients, then pour batter into the loaf tin.


Bake the loaf

Bake until inserted toothpick comes out dry, 45-50 minutes.


Let cool and enjoy

3 Ingredient Sweet Potato Pancakes

sweet potato

gluten-free flour

egg (or flax egg if vegan)

garlic powder (optional)

tsp paprika (optional)

tbsp oil, for frying

If using: Start by making the flax egg.  If regular egg is being used, skip this step. Combine the flaxseed meal and water together in a small bowl and set aside for 10 minutes to allow to congeal before using.

(If using: once flax egg has sat for 10 minutes), add all ingredients to a medium-sized bowl and stir together until a smooth batter is formed.

Preheat a frying pan over medium-low heat with oil of choice (I used coconut oil).

Pour 1/4 cup batter in pan at a time to make pancakes.  Fry for 4 minutes on each side without touching heat settings on stove.

Top with guac u0026 a poached egg and enjoy!

Simple Egg Substitute with Flax

Add the ground flax seed to a bowl.

Add the water and whisk until smooth.

Let stand for 5-10 minutes. Yields the equivalent to 1 small- to medium-sized egg that you can use in your favorite recipe.

Made with wholesome gluten-free flours, shredded zucchini and fresh lemon zest, these muffins are bursting with flavor and nutrition! 

Vegan Lemon Zucchini Muffins

ground flax or chia (combined with 3 tablespoons water)

oat flour (certified gluten-free

almond flour

coconut sugar

baking powder

baking soda

¼ fine sea salt

cinnamon

dairy-free milk

lemon juice

lemon zest

applesauce

vanilla extract

tahini (tahini should be drippy coconut

zucchini (squeezed dry)

Preheat the oven to 350°F then lightly grease or line a muffin tin for 12 muffins.

Combine ground flax or chia with water in a small bowl then set aside to thicken.

In a large bowl, whisk together the oat flour, almond flour, coconut sugar, baking powder, baking soda, cinnamon and salt.

In a large measuring cup or medium bowl, add the almond milk and lemon juice. Stir to combine. Add the applesauce, lemon zest, vanilla extract, and tahini. Whisk until smooth.

Pour the wet ingredients into the bowl with the dry. Add the shredded zucchini and flax egg then stir everything together until evenly combined.

Fill each muffin tin 3/4 of the way full with batter. Bake in the oven for about 25 minutes, until light golden brown around the edges. Allow to cool for at least 20 minutes before serving. Store in an airtight container in the refrigerator for up to 5 days.
