In a large bowl combine olive oil with minced garlic, spices, and salt. Add chicken thighs and toss until chicken is evenly coated in spice mixture.

To cook on the stovetop: Preheat cast iron or heavy-bottom skillet over medium high heat. Add 1 tablespoon vegetable oil and coat bottom of the pan. Cook chicken 4-5 minutes on each side until well-browned and completely cooked through.

To cook on the grill: Preheat grill to medium high heat. Cook chicken 4-5 minutes on each side until well-browned and completely cooked through.

Let cooked chicken rest for a few minutes, then shred with two forks or an electric mixer.

Serve with warmed tortillas and desired toppings.

Store leftover chicken in the fridge for up to 1 week.

This quick and easy one-pot shrimp and pea orzo is a great weeknight meal!

One-Pot Shrimp and Pea Orzo

orzo pasta ((420 grams))

vegetable broth

white wine ((60 ml))

Bring a large pot of salted water to a boil. Add orzo pasta and cook into according to directions on the package, or until al dente. Drain and set aside.

Return the pot to the stove and add the vegetable stock and wine. Stir in the paprika, oregano, thyme, salt, pepper and garlic.

Bring mixture to a boil, then add peas and green onions.

Bring mixture to a boil again, then add shrimp. Cook for 2-3 minutes, stirring often, until shrimp cook all the way through and turn pink.

Return the orzo to the pan along with the lemon juice, lemon zest and butter. Cook for a few minutes until orzo soaks up the sauce.

Serve immediately with Parmesan cheese, if desired.

Measure 4 sheets of heavy duty aluminum foil to about 18 inches. Spray with nonstick cooking spray.

Layer beef and veggies in a mound into the center of each sheet of foil, dividing ingredients evenly between all 4 sheets.

Top with butter or oil and fresh herbs.

Season heavily with salt and pepper, about 1/2 teaspoon of salt for each packet.

Fold edges of foil over and crimp tightly to seal. If cooking on grill or fire, consider double wrapping to prevent tears in foil.

To cook on fire: Wait till fire has turned to coals and spread logs out to heat is as even as possible. Cook on logs for about 20 minutes, flipping and rotating as needed to promote even cooking, until meat is cooked through and veggies are soft.

To cook on grill: Preheat grill to medium heat, about 400° and cook for 20 minutes, flipping halfway through, until meat is cooked through and veggies are soft.

To cook in oven: Preheat oven to 400°F and cook for 20 minutes or until meat is cooked through and veggies are soft.

Carefully open up foil packets as the steam inside is very hot. You can eat straight out of the foil or dump contents onto a plate.
