Foil Packet Cheesy Sausage and Peppers are so easy to make on the grill if you’re camping, vacationing, or just looking for an easy dinner with even easier cleanup!

Foil Packet Cheesy Sausage and Peppers

Reynolds Wrap® Non-Stick Foil

Preheat the grill on high heat on one half and medium-low on the other.

In a large bowl combine the onions, pepper, olive oil, salt and pepper.

Tear off 4 12 x 18” sheets of Reynolds Wrap® Non-Stick Foil.

Divide the onions and peppers between 4 pieces of foil, with the dull side facing up. Top with 3 tablespoons marinara.

Bring up the long sides of the foil, so the ends meet over the food.

Double fold the ends, leaving room for heat to circulate inside. Double fold the two short ends to seal the packet tight, so no steam escapes.

Place the foil packets on the side of the grill with the medium-low heat. Cook until the vegetables are tender, about 25 minutes.

When ready, set aside and add the sausage to the medium-low side. At this point you can shut off the high side of the grill.

Cook sausage, 6 to 8 minutes turning often until cooked through in the center and place on a cutting board.

Open the foil packets, slice the sausage and add to the foil packets, top each with 2 tablespoons cheese and keep open.

Cover grill and leave until cheese melts, about 5 minutes. Serve with bread, if desired.

Spice Rubbed Fish is zesty and so flavorful, the refreshing watermelon salsa is the perfect compliment. Cooked in foil on the grill or the oven!

Foil Packet Spice Rubbed Fish with Watermelon Salsa

watermelon (1/4 inch)

red onion (finely diced)

tbsp roughly chopped fresh cilantro

lime

jalapeno pepper

olive oil

(skinless fish filets, 6 oz each (striped bass, salmon, cod

tsp smoked paprika

tsp kosher salt

onion powder

garlic powder

tsp ground cayenne pepper

tsp oregano

tsp black pepper

lime (juiced)

Reynolds Wrap® Heavy Duty Aluminum Foil (12 x 18 inches)

lime wedges (for serving)

Combine salsa ingredients and refrigerate at least 20 minutes until ready to cook the fish.

Mix the dried spices and seasoning together in a small bowl, squeeze the lime on the fish then rub the seasoning onto fish.

Lay out 4 large sheets of Reynolds Wrap® Heavy Duty Foil 18 x 12. Put the fish in the center of each and drizzle with olive oil.

Bring the short ends of the foil together and fold twice to seal; fold in the sides to seal, leaving room for steam.

Cook the packets.

Preheat a grill to medium high or light a campfire and put a cooking grate in place. Grill the foil packets until the fish is just cooked through, 10 to 12 minutes.

Let the packets sit 5 minutes, then carefully open and top with salsa and serve with lime wedges.

Grill or campfire:

Preheat the oven to 450F.

Put the foil packets on a baking sheet; bake until the fish is just cooked through, 12 to 15 minutes.
