These cauliflower wings bring in the best aspects of regular wings- a crispy exterior with a flavorful kick and a melt in your mouth interior.

Crispy Cauliflower Buffalo Wings

All-purpose flour

Cornstarch

½ teaspoon Smoked paprika

Cayenne pepper

salt

Canola oil

Nondairy milk

breadcrumbs

Buffalo sauce ((I prefer Frank's Red Hot, but any brand will do))

butter

mayonnaise

Nondairy milk (unsweetened)

Lemon juice

parsley

dill

Onion powder

Garlic powder

black pepper (to taste)

Preheat

Dry Prep

Mix the dry ingredients (flour, cornstarch, smoked paprika, cayenne pepper, and kosher salt) into a shallow bowl and whisk together with a fork.

Cauliflower

Place chopped cauliflower into a large mixing bowl and drizzle with 2-3 tablespoons of canola oil. Mix gently with your hands until the cauliflower is evenly coated in oil.

Dredge

Pour the mixed dry ingredients over the cauliflower and toss together with your hands, ensuring that the cauliflower is coated evenly.

Breadcrumbs

Drizzle the nondairy milk over the wings and quickly add the breadcrumbs. Continue to gently mix with your hands until the breadcrumbs have coated the wings.Pro Tip: Here is the key! While mixing in the breadcrumbs, press them firmly into the nooks and crannies of each piece of cauliflower. This helps to ensure that the breadcrumbs will adhere and not peel off each piece after baking.

Bake

Evenly space the cauliflower on a parchment lined baking sheet and bake for 20 minutes. Do not turn off the oven after this 20 minutes.

Preparing The Wings

Microwave

While the cauliflower is baking, microwave the buffalo sauce and coconut oil together until the coconut oil is completely melted. I typically will start at 40 seconds, then continue to microwave in ten second increments until melted.

Whisk

Once the coconut oil is melted, whisk the two ingredients with a fork until full incorporated.

Preparing The Buffalo Sauce

Cool

After twenty minutes, remove the cauliflower wings from the oven.

Sauce

Using a fork or tongs, dip each wing into the buffalo sauce mixture, make sure it is thoroughly coated, and put back on the same parchment lined baking sheet.

Bake the wings for an additional 15 minutes.

Assembling The Wings

While the wings are baking for the final 15 minutes, you can prepare the ranch. Whisk all the ranch ingredients together in a small bowl. Taste and adjust seasonings as needed.

Wrap 1 bacon piece around each wiener piece; roll in combined sugar and pepper to evenly coat.

Place, seam-sides down, in foil-lined rimmed baking sheet.

Bake 22 to 24 min. or until bacon is crisp and golden brown, turning after 12 min.

Separate each bun into 2 halves. Place 7 bottom bun halves, cut sides up, in single layer in 9-inch springform pan; press gently to form even layer. Brush with about 1/3 of the butter. Cover with 10 wiener halves, cutting into smaller pieces as necessary to form even layer.

Spoon ketchup into small resealable plastic bag, then spoon mustard into separate bag. Cut off small piece off one bottom corner of each bag. Use to drizzle 1/3 &lt;u&gt;each&lt;/u&gt; of the ketchup, then mustard over wieners in pan.

Place 2 bun bottoms and 4 bun tops, cut sides up, over wieners in pan. Brush with half of the remaining butter. Top with layer of 10 of the remaining wiener halves. Drizzle with half &lt;u&gt;each&lt;/u&gt; of the remaining ketchup and mustard

Cover with remaining bun halves, cut sides down. Brush with remaining butter.

Cut remaining wiener halves crosswise in half. Arrange on top of wiener &quot;cake.&quot;

Bake 10 min. Cool cake 3 min. before removing rim of pan. Top with relish, and swirls of the remaining ketchup and mustard.

There&#039;s no need to travel to Windy City for a bite of an authentic Chicago hot dog.

Prep. Cut the stem off the end of the tomato and squeeze it over the trash can ejecting the seeds. Chop the tomato into 1/4&quot; (6.4 mm) chunks. Dice the onion.

Cook. For the classic dirty water dog, bring enough water to cover the dog to a boil, then cut back to a simmer. Simmer, never boil, the dog for 10 minutes.

For a char dog, use a technique I learned from Gold Coast Dogs. Cut an X shape in the ends of the dog. When they cook they will curl up and get extra crispy. Cook the dogs over a medium high grill until the skin darkens and there are nice grill marks all around.

Serve. To serve a Chicago dog, begin by placing the frankfurter on the bun. Squirt the mustard on the dog on one side between the meat and the bun. Spread the relish between the meat and the bun on the opposite side of the mustard. Sprinkle the chopped onions on top of the mustard. Distribute the tomato chunks all around. Place the peppers on top of the tomatoes. Place the spear on top of the onions and mustard. Sprinkle the celery salt on top of the vegetation. Absolutely, positively, no ketchup. Fohgeddaboudit. Now serve and enjoy.

Boil the hot dogs in water until the hot dogs rise to the surface. Remove from the water and place into buns.
