For the crust: In a bowl mix together the graham cracker crumbs, sugar and butter until thoroughly combined. Coat a 9 inch pie pan with cooking spray and firmly press the graham cracker mixture into the bottom and sides of the pan. Chill for at least 30 minutes or up to 3 days.

For the glaze: Place the sugar, cornstarch and water in a medium saucepan. Stir until smooth. Turn the heat on medium-high and bring to a boil, cook for 1-2 minutes or until thickened.&nbsp;

Remove the pan from the heat and stir in the gelatin, mixing until gelatin is completely dissolved. Chill the glaze for 20-30 minutes to cool.

Arrange the berries in the pie crust and pour the glaze evenly over the top. Chill for at least one hour, or up to 3 hours.

Top with whipped cream and mint if desired. Cut into slices and serve.

Prebake pie crust according to directions on package (making sure to prick the crust with a fork so it doesn&#39;t puff up too much while baking). Cool to room temperature

In a sauce pan, over medium-high heat, add water, sugar, cornstarch, and strawberry gelatin. Whisk together until thoroughly combined.

Whisk mixture constantly while heating to prevent clumping or scorching until mixture begins to come to a gentle boil.

Remove pan from the heat and allow the glaze to cool. Tip: I like to put the sauce pan into my sink where I&#39;ve made some ice water.

As the glaze cools it will become translucent in color and you should notice it will thicken a little more as well. Whisk it occasionally as it cools. It should be thickened but still pourable.

Add sliced berries to the baked and cooled pie crust.

Pour strawberry glaze over berries. Making sure to get it in between the nooks and crannies of the berries as best you can.

Chill pie in the refrigerator at least 2-3 hours before slicing and serving. Top with a dollop of whipped cream.

Sugar Free Strawberry Pie

Preheat oven to 350°F.

Place one crust in the bottom of a 9" pie plate. Spread the remaining crust on a lightly floured surface and cut small hearts out using a 1" heart cookie cutter. Cut as many hearts as you can.

Brush the edge of the pie crust with a little bit of water (the one in the pie plate). Add hearts around the edge of pie crust. Use a fork to poke holes in bottom and sides of crust. Place remaining hearts on a greased cookie sheet.

Bake pie crust for 15-18 minutes or until edges are light golden brown. Let cool.

Bake hearts for 9-12 minutes or until light golden brown. Let cool.

Layer strawberries on bottom of cooled crust.

Stir together water and corn starch in a medium saucepan. Bring to a boil, stirring constantly. Lower heat and simmer while stirring constantly until thickened.

Remove from heat and stir in gelatin. Stir until completely dissolved.

Pour over strawberries.

Place in refrigerator until set, about 4 hours or overnight.

I have looked in TN, DE, MD, NJ, KY, and can't find it. You can get the chocolate cook and stir sugar free on Amazon but you have to buy a case of it, which I did. It does make a good sugar free chocolate pie.

This pie is excellent. 
I used to make my sugar free strawberry pie using Cook and Stir Sugar Free Vanilla pudding and Sugar Free Strawberry Jell-O. BUT I cannot find the sugar free vanilla pudding any more.
This recipe is better than the other recipe.

First time making this pie for a bit over 200 cal a slice it is yummy.  The pie actually stays together much better and fresher looking  long..
Not the same texture however is absolutely delicious. I purchased some Almond Milk whipping cream to top it off.

This Sugar Free Strawberry Pie tastes JUST like the classic pie from Shoney's Big Boy restaurant back in the day! Easy to make with just 5 ingredients and a pre-made pie crust! If you don't want it sugar free, you can totally make it with regular sugar.

Fresh Strawberry Pie is made with 4 cups of strawberries that are tossed in a sugar blend, then baked in a homemade pie crust for just 40 minutes.

Strawberry Pie Recipe

all purpose flour

salt

unsalted butter

cold water (up to 2/3 cup if needed)

tsp ground cinnamon

tbsp vanilla extract

tbsp milk

In a medium sized bowl, add flour, sugar and salt and whisk together to combine.

Next add your butter cubes to flour and using your pastry cutter, cut the butter into the flour mixture until various sized crumbs appear.

Slowly add the cold water into the flour until a ball of dough forms. Start with 1/2 cup and add more water if you need it. Knead the dough quickly to bring it together. Don&#039;t worry if there is any flour left in the bowl.

Remove the dough from the bowl, cut into 2 sections and round into balls. Cover each ball tightly with plastic wrap and place in the refrigerator for 30-45 minutes to rest.

For the Pie Dough

In a large bowl, mix together sugar, flour, cinnamon, and salt until combined.

Next throw in strawberry slices, and vanilla extract and toss until combined then set aside.

For the Filling

Preheat the oven to 425 F.

Remove 1 dough ball from the fridge and add a bit of flour to a working surface or clean the counter and place dough on it. Using a rolling pin, quickly roll dough out to about ¼ - ½ inch thickness and place in a 9 inch pie plate.  Trim any access dough from the rim.

Add strawberry mixture to the inside of the crust.

Remove another dough ball from the refrigerator and roll it out to ¼ to ½ inch thickness and use a lattice design to top the pie.

Brush the top of the pie crust with milk then sprinkle with remaining sugar.

Bake for 35-40 minutes or until the crust is completely golden brown and the strawberries are bubbly.  If you find that the ends of the crust are starting to brown a little too quickly, just top it with foil after baking for 20 minutes.

Remove from the oven and cool for 1 hour then serve.

To Assemble

This recipe was a hit! Every last crumb was devoured by party guests! It made more dough than i needed so i stored the extra in the fridge to make mini cupcake tin pies later that week. Using this recipe again!

I made this today. I really liked the addition of cinnamon and vanilla to the filling. It was good but I do think I personally prefer the traditional uncooked strawberry pie. One thing I would suggest would be to blind bake the pie shell for ten minutes before adding the filling. My berries were quite juicy and the crust got a little soft. Still, it was very enjoyable. Much to my dismay, it seems that the rest of the country considers  strawberries in a gelatin the only way to serve strawberries in a pie.  I believe your pie has so much more flavor than they do.
