Fried Oysters

oysters (don't rinse)

buttermilk

hot sauce

yellow cornmeal

all purpose flour

salt

lemon pepper pepper

granulated garlic

onion powder

tsp smoked paprika

peanut oil or vegetable oil

Heat 2-3 inches of oil in a Dutch oven to 350°F.

In a shallow dish whisk together buttermilk, egg and hot sauce. (adjust amount of hot sauce to taste)

In a separate shallow dish whisk together cornmeal, flour, seasoned salt, lemon pepper or black pepper, garlic, onion powder and paprika.

Add oysters to buttermilk mixture, let soak for 5-10 minutes. Remove letting excess drip off then dredge in dry ingredients.

Drop oysters in hot oil, cooking in batches for around 2 minutes or until golden and crispy turning as needed for even browning.

Remove from oil using a stainless steel spider or slotted spoon to a paper towel lined platter or sheet pan. Season lightly with additional seasoned salt.

Serve immediately with a remoulade, tarter sauce or cocktail sauce for dipping, if desired.

Briny flavored with a light-as-air texture, these fried oysters are going to become your new favourite appetizer. Pair with my chipotle aioli and they make the perfect dish year-round for something to snack on before dinner.

The Best Crispy Fried Oysters (Tempura-Style)

oysters (fresh, shucked)

flour

½ tsp baking soda

½ C ice water

⅔ C ice-cold soda water

egg (room temperature)

egg yolk (room temperature)

olive oil

lemon juice

Dijon mustard

chipotle pepper in adobo sauce

Prepare your oysters, and set them in a sieve to drain any excess moisture.

Pour your oil in a Dutch oven or large pot, and heat over medium high heat (this will take a few minutes).

Whisk the flour, salt and baking soda in a medium sized bowl.

Add the egg, water and soda water, mixing genltly to combine. The batter should have a pancake batter-like consistency. If you need to adjust, you can add more flour or water accordingly.

Place the oysters in the batter, and once your oil has reached 350°F, add the oysters one by one to the oil. Cook for 3-5 minutes depending on the size.

Remove to a wire cooling rack over a baking sheet. Sprinkle with salt and serve with chipotle aioli.

Combine all the ingredients in immersion blender. Blend for 10 seconds, or until smooth. Keep in the refridgerator until ready to serve.
