Phan's version is relatively simple; crisp green papaya slivers mingle with pickled carrots, fried tofu, cucumbers, and celery. A dressing of potent fish sauce, vinegar, garlic, and chiles brings the vegetables together, and then the whole caboodle is topped with fried shallots and roasted peanuts. You will, of course, have find a good way to julienne a giant papaya, pickle carrots, fry both tofu and shallots, and mix it all together before dinner. It is no last-minute side dish, but you'll be happy to have put in the time.

In an 8-inch frying pan, heat the canola oil over high heat to 350°F on a deep-frying thermometer. When the oil is ready, carefully add the tofu slices and fry, turning once, for 15 minutes, until golden brown on both sides. Using a slotted spoon, transfer the tofu to paper towels to drain. When cool, cut into into strips 1/4 inch wide.

In a large bowl, combine the papaya, rau ram, cucumber, celery, carrot, and tofu strips. Pour the flavored fish sauce and shallot oil over the top and toss to coat evenly. Transfer to a serving platter and garnish with the peanuts and  shallots. Serve immediately.

This fragrant curry paste is a perfect base for chicken, vegetable and fish curries. Here, Valli Little has used it in a chicken and eggplant curry with absolutely tasty results.

Homemade Crispy Shallots

300 ml vegetable oil

salt

Slice shallots thinly and evenly - using a mandoline gives you the best results

Place oil and shallots into a medium saucepan and turn onto a high heat until they start to bubble - approx 5/6 minutes

Turn the heat to low and cook until shallots start to turn a light golden brown - approx 8/10 minutes. Pay close attention to the shallots at this point as they are quick to burn.

Remove shallots from oil and let drain on paper towel, sprinkle with a pinch of salt and enjoy!

Adding <a href="https://cooking.nytimes.com/recipes/1023193-fried-shallots">homemade</a> or store-bought fried shallots to classic garlic spaghetti gives it extra caramelized sweetness and depth of flavor, along with crunch. Add the shallots in two stages so that some of them soften and give their flavor to the sauce, and the rest remain crispy. Cooking the spaghetti in a relatively small amount of water concentrates its starch, making it easier to form a creamy, emulsified sauce. If you can’t have your pasta without cheese, feel free to grate some Parm or pecorino on top at the table.

Spaghetti Aglio e Olio e Fried Shallot

If using homemade shallots, skip to Step 2. If using store-bought shallots, toast them in a dry 12-inch skillet over medium heat until deep caramel brown and aromatic, about 3 minutes. Season generously with salt and transfer to a bowl.

Smash the garlic cloves with the side of a knife and roughly mince. Set aside. Add a couple of inches of water and a large pinch of salt to the skillet, and bring to a rolling boil over high heat. Add the pasta and cook, stirring occasionally, until just shy of al dente (about a minute less than the package directions).

Meanwhile, combine ¼ cup oil, the minced garlic, red-pepper flakes and a large pinch of salt in a large saucepan or skillet. Heat, stirring frequently, over medium-low until the garlic is very aromatic and just starting to turn pale gold in parts, about 5 minutes. It should maintain a very gentle sizzle the whole time it is cooking (adjust heat as necessary). When the garlic is done, shut off the heat, then, using a ladle or spoon, add a large splash of the pasta water to the pan with oil to halt the cooking. Add half the toasted shallots and stir.

When the pasta is just shy of al dente, using tongs, transfer it to the pan with the garlic oil, allowing any liquid that clings to it to come along; reserve a bit of the pasta water. Add the remaining 2 tablespoons olive oil. Return the pan with the pasta and garlic oil to high heat, and cook, stirring and tossing constantly, until a creamy, emulsified sauce coats the pasta. (If the sauce looks watery, continue tossing and cooking. If it looks broken and oily, add some more pasta water a few tablespoons at a time and continue cooking until it emulsifies.) Stir in the parsley and chives (if using), season to taste with more salt (it can take quite a bit of salt), transfer to a serving bowl, sprinkle with reserved toasted fried shallots and serve.

Homemade Green Bean Casserole

medium shallots, halved lengthwise & then sliced thinly into half moons

vegetable oil

cajun seasoning (or seasoned salt),

beans,

unsalted butter

baby bella mushrooms, sliced

chicken broth

lemon juice

dijon mustard, smooth or whole grain

worcestershire

thyme

red pepper flakes, optional

nutmeg

kosher salt & black pepper,

heavy whipping cream (or half and half)

Place the oil in a medium saucepan over medium heat. Then add shallots into the pan, no need to wait for the oil to warm up. Cook the shallots, gently stirring often, for about 15-20 minutes. If you notice the shallots browning too quickly, lower the heat, as needed until the shallots achieve a golden-brown color.

Use a fish spatula (or similar utensil) to remove the crisp shallots and place onto a paper towel-lined plate to blot excess oil. Season crispy shallots with cajun seasoning or seasoned salt- to taste. Set aside until green bean casserole is ready to assemble. Then place a fine-meshed sieve over a bowl to remove any shallot debris and save shallot-infused oil for future use!

For the fried shallots:

Bring a large pot of water to a boil. Once boiling, add in the green beans and cook for 3 minutes. Drain immediately and place green beans into a bowl filled with cold water and ice to stop the cooking process. Once cool, drain the green beans and set aside.

In a large skillet over medium heat, add the butter. Once melted, add the mushrooms and garlic and sauté until the mushrooms are tender and lightly golden, about 3-4 minutes.

Next, add the flour and stir until well combined and the flour has mostly dissipated. Slowly pour in the chicken broth and stir well to combine, be sure to hit any hidden pockets of flour. Use a wooden utensil to scrape up any browned bits on the bottom of the pan.

Stir in the lemon juice, dijon mustard, worcestershire, thyme, red pepper flakes (if using), ground nutmeg, and salt/pepper- to taste, stirring well to fully combine. Bring this mixture to a simmer for 2-3 minutes.

Then stir in the cream (or half and half) along with half of the parmesan, stirring until well incorporated, about 1-2 minutes.

Place the blanched green beans into an oven-safe casserole dish and pour the creamy mushroom sauce on top and toss until well coated. Evenly sprinkle the remaining parmesan over the green bean mixture.

Transfer the dish into the oven and bake for 20 minutes.

Then remove from the oven and toss the mixture once more. Evenly sprinkle the fried shallots over the green beans. Place back into the oven to bake for another 7-10 minutes, careful not to burn.

Serve this green bean casserole immediately. Enjoy!

I made this last night for Thanksgiving per the "make ahead" instructions and it was delicious!  We don't typically do green beans for the holidays (we stick to collard greens), but these were a hit!  Great flavor and the homemade shallots are also excellent!

How to Make Crispy Fried Shallots (Hanh Phi)

Slice shallots

Using a food processor with a slicing blade or a mandoline slicer, slice the shallots as evenly and thinly as possible. You can also slice by hand if you don&#8217;t have these tools.

Microwave

Spread shallots evenly on a microwave-safe plate lined with several layers of paper towels. Microwave for 1 minute. Remove from microwave and dab the softened shallots with more paper towels to remove excess moisture.

Add oil and shallots to a frying pan (yes, add shallot to room temperature oil). Heat oil to 250°F and lightly fry for 8 minutes or when the majority of the shallots turn light brown. Occasionally stir the shallots for even browning. Note: residual heat will continue to cook the shallots so get them out of the oil before the desired color.

Storage

Use a slotted spoon or a fine mesh sieve to remove the shallots and transfer them a to plate lined with paper towels or a wire basket for better results. Once cooled, the shallots are ready to use. Store fried shallots in an airtight container at room temperature for up to 8 months.

Reserve the oil

Strain the oil through a fine-mesh strainer or cheesecloth to remove any last bit of shallots that may have remained. Transfer this aromatic shallot oil to an air tight jar and store it at room temperature. Reserve it for use with dishes that require oil.

Thank you for posting this recipe! The picture was extremely helpful in knowing when to take out the shallots. I think I pulled mine about 10 seconds too early so not all of them were evenly crispy and they might need to dry out a little more for ideal texture. All around, excellent. I also ended up seasoning with a little salt at the end for a little more flavor.
