Instant Pot Pinto Beans

(450 grams) dried pinto beans (, rinsed & drained)

(30 milliliters) regular soy sauce

Render Bacon in Instant Pot: Before you turn on the heat, layer 6 slices of bacon in Instant Pot. *Note: We are using Instant Pot’s preheating heat to render &amp; crisp the bacon. Heat up Instant Pot using “Sauté More” function. Flip bacon occasionally. Once Instant Pot says “HOT” (roughly 12 mins), the bacon should be done. Place bacon on a paper towel to absorb excess fat. If they are not done, brown for a few more minutes.

Saute Onion and Jalapeno: Add onion slices and jalapeno in Instant Pot. Cook for 3 ½ minutes. While the onions and jalapeno are sauteing, cut the bacon into bit size.

Saute Garlic and Spice: Add 3 bay leaves, ½ tsp ground cumin, ½ tsp dried oregano, and minced garlic in Instant Pot. Cook until fragrant (roughly 1 minute).

Deglaze Instant Pot: Pour ½ cup (125ml) unsalted chicken stock in Instant Pot, then deglaze by scrubbing all the flavorful brown bits off the bottom of the pot with a wooden spoon. Give it a quick mix.

Pressure Cook Pinto Beans: Add 2 tbsp (30ml) regular soy sauce, half of the bacon bits, well-drained pinto beans, and 3 ½ cups unsalted chicken stock in Instant Pot. Mix well and make sure all the beans in Instant Pot are submerged in the liquid. Carefully layer the crushed fire-roasted tomatoes on the very top. Do not mix after this. Close the lid and turn the Venting Knob to Sealing Position. Pressure Cook at High Pressure 45 mins + 20 mins Natural Release. Open the lid carefully.

Thicken &amp; Season Mexican Beans: Release some of the starch by stirring with a wooden spoon over &quot;Saute&quot; function. Stir pinto beans until desired thickness. Taste the beans, then adjust seasoning accordingly (for reference, we added roughly 2 – 3 pinches of salt to season the Mexican Pinto Beans to open up the flavors).

Garnish Instant Pot Pinto Beans: Give pinto beans a final taste, then garnish. If you like it spicy, you can garnish the Mexican beans with jalapeno. Garnish with chopped cilantro and the remaining crisped bacon bits. Serve these tasty pinto beans immediately, and enjoy~

These amazing Mexican Charro Beans are made with pinto beans simmering in a boldly flavored broth with bacon, ham, chorizo, chili peppers, tomatoes and spices.

Charro Beans

Pour dry beans into a colander and rinse them off, removing any unwanted pieces. Add to a large pot with 6 cups of water (or enough to cover them by about 2 inches), a small chunk of onion, bay leaf and 1/2 teaspoon of salt.

Bring to a boil, then reduce heat to a simmer and cook for 1 to 2 hours, until the beans are tender, but not bursting. (Mine usually take about 1 hour but depends on how dry/old your beans are). Check them a few times during cooking to make sure they are covered in water and add a little more water if needed.

Once the beans are tender, drain them, reserving the liquid and pouring it into a measuring cup. Add additional water (or reduce liquid if needed) to make 2 ½ cups of total liquid. Stir in 1 teaspoon chicken bouillon. Set aside.

Cook the Pinto beans:*

Add the bacon and chorizo to a large pot and cook for about 5 minutes or until bacon is cooked. Remove some of the grease. Add onion and garlic and cook until onion is translucent. Add ham (sausages, if using), diced tomatoes, peppers, cilantro, oregano, paprika, cumin, black pepper and cook for 5 additional minutes.

Add cooked beans and broth and simmer for 15 minutes. Taste and season with salt and pepper, or additional spices if needed. Garnish with cilantro before serving.

Serve as a main dish, wish warm tortillas, or as a side dish. When serving as a side dish I like to thicken the beans by adding a cornstarch slurry at the end (1 tablespoon of corn starch mixed with 2 tablespoons of water).

Mexican Charro Beans, also known as Frijoles Charros, are loaded to the brim with flavor! Pinto beans are cooked in a chicken broth seasoned with warm and inviting spices. Throw in some bacon, tomato, onions, ham, and jalapenos for the perfect blend of bold flavors.

In a medium pot, cook your diced bacon until it has your desired consistency, I cooked mine until it was just becoming crisp. Remove the cooked bacon and place on a paper towel to soak up some of the fat. Drain all of the bacon fat from the pot, reserving 3 tablespoons in the pot.

Add your diced onion, and jalapenos to the bacon fat in the pot and saute over medium high heat until the onions are transparent, about 3-4 minutes. Add in the garlic and cubed ham and saute for an additional minute.

Add your bacon back into the pot along with your cans of beans, tomatoes, chicken broth, cumin, sugar, oregano, paprika, and salt and pepper. Bring it just to a boil then reduce the heat to low and simmer for about 8-10 minutes, stirring occasionally.

Serve fresh cilantro and limes.

This recipe is an adaptation of the recipe my dad uses at his restaurant.  Frijoles charros, depending on what part of Mexico you are in, include chorizo, sausage or bacon. I made it vegan!

Vegan Frijoles Charros (Mexican Cowboy Beans)

Pinto beans (dried)

Onion (white, large)

Garlic, crushed

Vegetable stock

(3/4 cup) Vegan chorizo ((see note))

Serrano chiles (minced)

Tomato, large (diced)

Soak beans in water overnight.

The next day, strain them and place in a large pot. Pour enough water into the pot to fill ¾ of the way.

Cut your onion in half. Place ½ the onion, cilantro sprigs, and 3 garlic cloves into the pot with the beans. Reserve the other half of the onion.

Bring water to a simmer and let beans cook until almost tender, approximately 1 ½ hours.

While the beans are cooking heat a large sauté pan to medium-high heat. Add chorizo and sauté until slightly browned, about 4 minutes. While the chorizo is cooking, dice the other half of the onion.

Remove chorizo from pan and set aside. Add ¼ cup of water, diced onion, and serrano peppers to the sauté pan. Sweat onion and chiles until tender and translucent about 4 – 5 minutes. Add tomato and let cook for 7-8 minutes more, or until the tomato has broken down and released all of its juices.

Add this mixture, and the chorizo to the pot of beans and let simmer for 20 more minutes or until beans are completely tender. Season to taste with salt and pepper.&nbsp;

Before serving, remove the half onion, cilantro sprig, and garlic cloves from the beans. Season with salt and pepper

Set Instant Pot {6 Quart} to sauté and let get hot.  Add in the bacon and cook for 2 to 3 minutes. Add in onion, garlic, and jalapeno and cook another 1 to 2 minutes.

Pour in chicken broth and scrape any bits off the bottom.

Add in salt, tomatoes, beans, cumin and bay leaves, Stir. Lock on lid and set to manual high pressure and cook for 60 minutes.

Once cooking is done let the beans NATURAL RELEASE. This will take about 30 to 40 minutes.

Stir and serve.

Charro Beans (Frijoles Charros)

Add pinto beans to a large heat proof bowl and cover with boilng water from the kettle. Set aside for at least 15 minutes while you prep other ingredients. Drain and rinse WELL with cold water.

Set the saute function of your instant pot for 5 minutes and add in the onions, oil and a pinch of salt and pepper. Saute.

Once done stir in garlic and add water, bouillon, drained beans and rest of ingredients. Close lid and set valve to 'sealing' position. Push bean/chili button and set for 60 minutes or use pressure cooker button and set for same time on high pressure.

When time is up let pressure naturally release for 10 minutes then turn valve to venting. Once pin has dropped remove lid. Stir &amp; taste for seasons add salt/pepper if needed. Enjoy! Looks very authentic (and we lived in AZ for decades). I like to soak beans overnight as I find they are easier for us to digest. How long would you recommend cooking the fully soaked beans? Thanks!

So good! I’ve made this twice already this week! I didn’t have ancho chili powder so threw a couple of chipotle peppers in sauce in with the beans. Yum!

These beans came out so good! I soaked them 8 hours and then followed the recipe but cut the cooking time in the instant pot back to 45 minutes. The only other change I made was to use Imagine brand vegetable broth because I couldn’t find the no chicken version of Better than Bouillon.

What do you recommend doing differently if using canned pinto beans? I was thinking of just simmering on the stove with the other ingredients so they don’t get too soft in the instapot.

Start by cooking sliced bacon in a large pot or dutch oven until it’s slightly crispy. Set aside.

In the same pot, cook chorizo until done, breaking it up with a spoon as needed. Set aside.

Add sliced hot dogs to the pot and sauté for 2-3 minutes. Set them aside.

Next, sauté diced onions until soft. For extra heat, add diced jalapeños. Once softened, add diced tomatoes and sauté for 2-3 minutes. Then, reintroduce the bacon, chorizo, and hot dogs.

If there’s excess fat from bacon and chorizo, carefully remove some with a spoon.

Pour in cooked bayo beans with enough liquid to make a thick soup. We used an additional 4 cups of homemade chicken stock. Bring the mixture to a boil, then let it simmer for 5 minutes.

Season the dish with salt and pepper according to your taste.

Serve the frijoles charros in bowls as a main dish or side. Garnish with chopped cilantro and diced onions, and serve with warm tortillas. ¡Provecho!
