Preheat oven to 350°F.

Brown ground beef, onion and garlic in a large, oven-proof skillet over medium high heat until beef is no longer pink (about 5-7 minutes). Drain and return beef mixture to the skillet.

Stir in chili powder, beans and tomatoes. Simmer for about 5-10 minutes to allow the flavors to come together and the liquid to thicken slightly. Season with salt and pepper, to taste.

Sprinkle grated cheddar over top. Top with corn chips.

Bake, uncovered, for about 15-20 minutes (or until the casserole is warm and the cheese is melted). Garnish with optional toppings and serve immediately.

In a medium sized skillet, brown ground beef with the onions.  Add the chili beans, diced tomatoes, tomato sauce and chili seasoning.  Let simmer about 10 minutes.

Spread chili into the bottom of a 9x13 casserole dish.  Sprinkle 1 cup of cheese over the chili, then the corn chips, and then the remaining 1 cup of cheese.

Bake uncovered in a 350 degree oven for 15 to 20 minutes, until warmed through completely and cheese is melted.

In a 10-inch cast-iron skillet, cook the beef and onion over medium-high heat until the beef is no longer pink. Stir in taco seasoning, chili powder, and tomato sauce. Bring to a boil and reduce heat to low. Simmer 3-5 minutes, or until slightly thickened.

Stir in tomatoes, beans, and corn. Simmer an additional 2 minutes. Remove from heat and top with shredded cheese. Then sprinkle the fritos over top.

Bake 10-15 minutes, or until cheese is melted and bubbly.

Braised Beef Frito Pie

Enchilada Sauce, 400 g

Braised beef, 2-3 portions

Garlic Powder, a spoonful

Smoked Paprika, a sprinkle

Frito Corn Chips, 1 bag

Colby Jack Cheese,

Cilantro,

Sour Cream,

Sauce,

Make the quick chili

Add the can of enchilada sauce to a saucepan and set to medium heat. Taste and adjust the sauce with garlic powder, smoked paprika, and any other seasonings you see fit.

Bring to a simmer and add the braised beef. Let that warm through and reduce until the meat is fully incorporated and the chili mixture has reached your desired consistency. Taste and adjust as needed.

Assemble the Frito pies

In serving bowls, layer in a portion of Fritos and grated cheese. Top with the warmed chili braised meat, then garnish with diced onion, cilantro, sour cream, and hot sauce as desired.

Alternatively, serve the chili and garnishes right in the Frito bag.

Take a bag of Fritos pair it with a meaty base, dump in a casserole dish and you&#39;ve got a Frito Pie! This is hands down my fav variation of Frito pie.

yellow onion (chopped fine (about 1 cup))

bell pepper (red

½ teaspoon course ground black pepper

chili powder (preferably dark)

oregano (Mexican if you have it)

can diced tomatoes (preferably fire-roasted)

Ranch beans

Worcestershire sauce

enchilada sauce (mild)

corn (preferably fire-roasted)

cilantro

Preheat oven to 350F. Set rack to middle position. Spray 9x13 baking dish with nonstick cooking spray. Reserve 1 cup Fritos and gently crush them; set aside. Layer in about half of the remaining Fritos, completely covering the bottom of the dish.

In a large skillet, add olive oil, onion, and bell pepper. Season with 1 teaspoon kosher salt. Cook over medium-high heat until just starting to caramelize, about 8-10 minutes.

Add garlic and spices and continue to cook for 1 minute.

Add ground beef and break up into small chunks. Cook until beef is almost cooked through, about 6 minutes.

Add in diced tomatoes, Ranch beans, enchilada sauce, and Worcestershire sauce. Continue cooking until the sauce starts to thicken, but is still thin enough that when you run a spoon through it, it comes back together fairly quickly, about 5 minutes.

Add corn and cilantro, stir together and remove from heat.

Pour about ½ of meat mixture on top of Fritos layer. Layer on half of the cheese, add the remaining meat. Layer on the remaining half of the Fritos, then the remaining half of the cheese.

Place in oven and bake until the mixture is hot and bubbling slightly, about 25 minutes. Remove from the oven and garnish with green onions. Let sit for 5 minutes, garnish each serving with crushed Fritos. Enjoy!

(9-ounce) bag original Fritos chips

Spray a 2-inch deep 9-inch pie pan with non-stick cooking spray and dump the 1 (9-ounce) bag original Fritos chips into the pan.

Heat a pot over medium-high heat on the stove, add the 1 pound ground beef and 1 cup diced onion to the pot. Cook for 8 minutes until the meat is browned and the onion is tender.

Add the 3 teaspoons minced garlic, 1 tablespoon chili powder, 2 teaspoons oregano, 1 teaspoon cumin, 1 teaspoon coriander, 1 teaspoon salt, and ½ teaspoon pepper to the meat mixture and stir to combine. Cook for one more minute.

Add in the 1 cup beef broth, 1 (8-ounce) can tomato sauce, 1 (10-ounce) can Rotel tomatoes, 1 (15-ounce) drained and rinsed can pinto beans, and 1 (15-ounce) drained and rinsed can kidney beans. Stir and cook for another 5 minutes to heat through.

Pour the chili evenly over the Fritos in the pie pan.

Top with 1 ½ cups shredded sharp cheddar cheese. Broil the pie on HIGH in the oven for 2-3 minutes until the cheese is melted and bubbling. Remove from the oven and serve fresh.
