These irresistible baked potato bites are loaded up with cheddar cheese, sour cream, crispy bacon, and green onions.

Loaded Baked Potato Bites

russet potatoes (, sliced 1/2 inch thick)

salted Challenge Butter (, melted)

Salt and pepper

cheddar cheese ((about 2 cups))

bacon (, chopped)

sour cream

green onions (, sliced)

Preheat oven to 400°F. Line sheet pan(s) with parchment paper or foil.

In a large bowl toss potatoes in the butter until well coated.

Arrange potatoes in a single layer on the sheet pan. You may need more than one pan. Sprinkle generously with salt and pepper.

Bake potatoes for 30 minutes or until tender, flipping once halfway through. Baking time may vary based on the size of potato rounds.

Top potato rounds with cheese, about one heaping tablespoon per rounds. Return potatoes to the oven for 3-4 minutes until cheese is melted and bubbling.

Add a dollop of sour cream, a few pieces of bacon, and some scallions to each potato round. Finish with a sprinkling of ground pepper.

Enjoy immediately.

Line a standard baking sheet with parchment paper. Stir the vanilla Greek yogurt so it is creamy and consistent. Then pour onto the parchment paper and spread evenly using an offset spatula or a spoon until the yogurt is about a quarter of an inch thick.

Evenly scatter the berries and granola on top of yogurt. Then, place the baking sheet in the freezer and freeze the yogurt for a minimum of 3 hours.

Once the bark is frozen, remove from the freezer. Use a sharp knife and cut the bark into 18-20 pieces. Enjoy immediately or store in the freezer.

Wash and fully dry strawberries. Moisture prevents the sugar coating from sticking.

Thread fruits onto wooden skewers, leaving space at the bottom.

In a saucepan, mix sugar and water. Stir gently to dissolve, then boil without stirring until the syrup thickens. Meanwhile, fill a large bowl with ice cubes and cold water. 

Test readiness by dropping syrup into ice water, if it hardens instantly, it’s ready. If it stays soft or doesn&#39;t harden, continue boiling the syrup a bit longer until it thickens properly.

Reduce heat to low. Quickly dip each fruit skewer into the syrup, tilting the pan for full coating.

Immediately dip in ice water to harden.

Place on parchment paper to set for a few minutes.
