This rich, deeply fudgy old fashioned fudge sauce attains incredible complexity and depth two ways. First, the addition of a touch of alcohol brings out alcohol-soluble flavors. Starting with a lightly caramelized base affords more depth and that bit of chew and stretch you expect from an excellent fudge sauce. A full recipe yields over a quart, so you can either half the recipe or make the full recipe and share with friends.

NOTE: All ounce measurements are by WEIGHT and not VOLUME.

Hot Fudge Sauce Recipe for One

(25 grams) granulated sugar

(8 grams) cocoa powder

(14 grams) salted butter (*)

In a small bowl, combine sugar and cocoa powder. Stir together and set aside.

In a small saucepan, over medium heat, melt butter. Whisk in milk followed by the sugar and cocoa powder mixture. Whisk continuously, beating out any lumps as they form, until mixture begins to thicken and bubble 2-3 minutes.

Remove from heat and continue whisking for about 30 seconds to cool the sauce slightly before whisking in the vanilla. Allow to sit and thicken for 2 to 3 minutes. Serve over ice cream, brownies, or pancakes and enjoy!
