Sichuan Garlic Chili Oil

Mix up your ingredients in a heatproof bowl. You will be pouring hot oil into it, so it MUST be able to withstand the heat.

Add the Sichuan peppercorns into the cold oil and bring it to smoking point. The time required will depend on your oil and your stove, but a general rule of thumb is when you can see it just start to show smoke or if it bubbles when a wooden chopstick in placed in the oil, it&#x27;s ready.

Pour the hot oil into the mixture of spices. Be careful because it will bubble and spit! 

Stir gently and let it cool before enjoying.

Chili Garlic Smashed Brussels Sprouts

(35-40) fresh brussels sprouts

vegetable oil

gochugaru (Korean red chili powder)

Prepare Brussels Sprouts. Pre-heating the oven to 425 F (220 C), and turn on the convection/fan setting if available. Start by slicing off the brown root-end of each brussels sprout, being careful not to slice off too much (so as to keep the outer leaves intact). Bring a pot of generously-salted water to boil, and cook the brussels sprouts until tender, about 10 minutes. Note: Salting the water here helps internally season the brussels sprouts. Don't skip it! Once tender, drain brussels sprouts and pour onto a parchment-lined baking sheet. Let cool for about 1-2 minutes.

Roast Brussels Sprouts. Lightly pat the brussels sprouts dry with paper towel, then toss them with vegetable oil. One by one, use something with a flat-bottom (for example, large spoon or mug) to gently press into a disk that is about half the original height. Spread brussels sprouts to a single layer, leaving ample room between each brussels sprout for air to circulate. Note: Use more than one baking sheet if needed. Roast the brussels sprouts for 20-25 minutes, flipping once half-way through. Towards the end of baking, keep an eye on the brussels sprouts and pull them at your desired crispness/charring. A good amount of charring is tasty here.

Make Garlic Chili Oil. In a pan or wok (still cold), simply combine vegetable oil, minced garlic, and red chili powder. Turn the heat up to low and let sizzle for about 5 minutes, or until smelling very fragrant. Taste and adjust seasoning with salt, and pour into a heat-proof bowl to cool. Note: for even more pungent garlic flavor, you can consider adding 1-2 cloves of fresh minced garlic to the finished chili oil. The flavor also gets better as you let it sit and infuse.

Assembly. Place roasted brussels sprouts on a plate and drizzle all over with the garlic chili oil. Garnish with toasted sesame seeds, flaky salt, fresh parsley, and/or sliced scallions. Enjoy warm.

Prepare your ingredients before starting the recipe. If theres one time you'd want to practice mise-en-place, it would be this recipe. The garlic and chili flakes heat up really fast you'll want to have things ready to go.

Begin by adding half of the oil into a sauce pan with all of the garlic. Heat the garlic and oil over low heat. Stir and adjust the heat to make sure the garlic is cooking slowly but not browning or burning. Do this for about 5 - 10 minutes. Garlic burns quite easily so controlling the heat and stirring will keep it from browning up to fast, the goal is to slowly infuse the oil with the garlic flavor.

Once the garlic has been cooking for about 5-10 minutes, add in the rest of the remaining oil and continue cooking for about 2-3 minutes until the garlic starts to sizzle.

Once the garlic begins to sizzle, add in all of the chili flakes, salt and sugar. Begin stirring for about 5 minutes letting it sizzle on medium/low heat without burning.

During the last minute of cooking add in the soy sauce and stir. Let it cool and enjoy!

A quick and easy-to-make homemade miso garlic chili oil recipe, made with shallots, garlic, Sichuan chili powder, and miso for an umami boost. A great condiment to use on rice, noodles, vegetables, or dumplings!

In a small bowl, pre-mix the soy sauce with the miso until it thins out the miso into a thin paste

In another bowl (heat-safe bowl preferably), add in the dry ingredients and mix them together

Add the thinned miso paste into the dry ingredients and mix it together until everything is combined

Peel the garlic, and grate it finely. If you don&#39;t have a grater you can finely chop or mince it. Add it to the very top of the chili mixture in a thin layer. Set this bowl aside for later.

Peel the shallots, and finely chop it. Set this aside for later.

Preparation

In a small pot, add in the oil and chopped shallots. Set the stove to medium heat

Heat the oil up and cook the shallots until they become a golden brown color.

At this point, the oil will be hot enough to make the chili oil. Carefully pour the oil over the ingredients in the bowl, focusing on pouring it over the raw garlic.

Once the oil has been all poured in, take a utensil and mix everything together well. Be careful the bowl may be very hot.

(Optional) If you are adding sesame oil, mix it in now.

Let it cool before transferring it to a glass jar.  Store it in the fridge or use it right away.
