How To Roast Garlic

Last time I used white truffle oil instead of olive oil...to die for!

Used a muffin tin and baked for 1 hr..Perfect!

I had to roast longer than 40 minutes. I roasted for an hour and used it to spread on flatbread pizza, before I put the sauce on it.

I’m roasting some right now, hoping without aluminum foil it still turns out. Using a glass baking dish, I sliced the top off of two cloves, drizzled heavily with EVOO, salted and peppered liberally. I’ve roasted whole cloves of garlic before and love the sweet pungency they offer to any dish, especially potatoes or veggies. The consistency is creamy, silken and unlike anything else. I’m planning on taking the roasted garlic, mashing it up with some EVOO and coating some asparagus spears in it then roasting in oven for 15-20 minutes. I usually prepare my asparagus with honey, shallots and olive oil but my grocery store didn’t have any shallots so I thought roasted garlic would make a great sub.

Lots of great ideas on prepping roasted garlic. I remove the outer skins, cut off the tops of each clove and use a finger to spread a bit of olive oil over the cut top. I use a small enameled cast iron Dutch oven to roast the garlic in which works out great, no need to introduce aluminum foil into the process and can fit about six heads into the Dutch oven. Takes about 40-45 minutes. Once they are roasted and can handle, I gently squeeze the cloves out so they remain intact, freeze them on a cookie sheet and then put them into a Ziploc. Great for adding into recipes or popping into your mouth as frozen garlic candies.  :)

After the garlic heads are roasted, use a cleaver and squeeze out the garlic onto food grade cutting board. Then scoop up the garlic contents and place into a mixing bowl.  Blend with additional butter and oil to desired consistency and viscosity.  Pepper and salt to taste.  Spread on toasted, sliced wafers of buttered French rustic baguette bread. I use gourmet white ground pepper because of the extra pungency and brighter taste.

Made this three times already. Each time I used a different oil like coconut, olive, or avocado. Both tasted great. I also added a little branch of rosemary right in the middle. In my Breville oven, it takes about 1 whole hour to bake but comes out buttery and tastes like candy! Thank you!

Definitely needs more than 40 minutes in the oven to get a spreadable consistency, but the taste is excellent!!

The sauce typically served with pita bread at Lebanese restaurants, this Lebanese Garlic Sauce is thick, creamy, and packed with flavor.

Lebanese Garlic Sauce (Toum)

garlic cloves (peeled (roughly 3 heads of garlic))

salt

canola oil (you may not need all of this)

lemon juice ((about one lemon))

Place the garlic cloves and salt in a large food processor and puree until smooth. It's a good idea to scrape down the sides two or three times to ensure that all of the garlic is finely processed.

Turn the machine back on and slowly drizzle in the oil through the lid starting with 1/2 cup. After the first 1/2 cup has been added, pour in a teaspoon of the lemon juice.

Continue alternating between 1/2 cup of the canola oil and a teaspoon of the lemon juice until you&#039;ve added all of the oil and lemon juice. Alternating between the two is the key to proper emulsification which creates the light and fluffy garlic sauce. One tip is to let the machine run between oil additions to let the emulsion thicken. NOTE: This process requires you to drizzle in the oil -- not dump in the oil right away. When you see it begin to thicken up THEN you start with the lemon juice.

You know it's done when the sauce is white and thick with a similar consistency of mayonnaise. It usually takes about 10-15 minutes.

How To Make Garlic Paste (Garlic Puree)

Peel the garlic using one of these methods. Optionally, remove the tough stem bit.You could also remove the green &#039;germ&#039; from within the center of each garlic clove for less bitter results. I usually don&#039;t, though.

Add the garlic to a high-speed blender and process it into a garlic puree.

Add the oil and salt to the blender and blend for a few seconds to thoroughly incorporate all the ingredients. The garlic paste is ready.Feel free to blend even longer into a smoother paste, optionally, or even leave it slightly chunkier.

Fridge: Store in an airtight glass jar for between 5-7 days. Don&#039;t leave it for longer as there is a chance of botulism with garlic and oil. If you don&#039;t think you can use it within a week, freeze any extra.Freezer: My favorite way to store this garlic paste is in the freezer. This is also the best method for anyone afraid of the risk of botulism.Spoon it into a small ice-cube tray in portion sizes (based on how much you generally use. You can add 1tsp per cube (1 clove) or more. That way, you can grab as many cubes are needed for any given recipe and add them straight to the pan. It can be stored for between 3-4 months.You can alternatively add the garlic paste to a freezer-safe bag and press to flatten, then break off bits (by eye as it won&#039;t be measured) as and when needed.

Separate cloves

Place the garlic head on a cutting board, root side up. Smash it hard, then loosen and separate the cloves.

Peel Garlic

Cut the root tip and and peel the cloves. Skip this step if using store-ready peeled garlic cloves.

Blend

Add garlic cloves and olive oil to the blender jar and blend for 30-45 seconds to make a smooth paste. Scrape down the sides of the blender jar once in between.

Store

Store in airtight containers or mason jars and refrigerate for up to a week. Alternatively, add to ice cube trays, cover and freeze for up to 3 months.

I made with 1 cup of peeled garlic and had to use 4 tablespoons just to get consistency in Magic Bullet small  container.

Garlic Paste Recipe- 10-Minute Blender Recipe

Learn how to make your own garlic paste at home from scratch in simple steps. My cooking mantra has always been if in doubt add garlic, paprika and a pinch of salt. Trust me it works all the time, this cooking condiment will never let you down especially when it is used fresh in dishes.

How To Make Garlic Paste

Salt (this is optional)

Peel the garlic if you haven’t already. Press the garlic bulb with the back of your palm to break it up, then remove the outer paper. Use your fingers to separate the cloves and peel the paper off it

Add the garlic cloves to a blender/food processor, add a little oil and process until puree or paste-like. You can also process it minced if that is how you like it. The whole process should take about 30 seconds to 1 minute depending on the quantity you are making.

Season the garlic puree with salt (this is optional by the way especially if you would be storing this in the freezer)

Spoon the puree in a cleaned jar and store in the fridge for up to a week. (Do not store longer than this in the fridge to avoid botulism poisoning)

20-minute Air fried lamb ribs/chops 😋

Soy sauce

rice vinegar

sesame oil

honey

Chinese five-spices

sesame seeds

Clean and cut the lamb rack into smaller ribs

Pour over the lamb ribs in a deep bowl and let it marinate in the fridge for about an hour or more

Place in the air fryer on “air-fryer” setting, on 180C for around 15-20 minutes only!!
