Garlic Scape, Lemon Grilled Chicken Tenders

lb chicken breast tenders

salt and pepper

garlic

tbsp Olive Oil

lemon

Salt and pepper chicken pieces on both sides.

Mix remaining ingredients together and baste chicken pieces.

Heat grill to medium high. Place chicken on grill and let it brown on the first side. Baste and turn to the second side. Depending on the size of your tenders, they should take approximately 10 minutes. Internal temperature should be 165°F

Garlic Scape Herb Compound Butter

lb unsalted butter, softened to room temperature.

c garlic scape, buds and stalks, chopped

parsley

basil

splash Olive Oil

Chop garlic scapes roughly in food processor or with chef&#x27;s knife. Chop herbs.

Soften garlic in olive oil over medium low heat, watching carefully. Garlic should just soften, not brown. Once garlic has softened, allow to cool to room temperature.

Add butter, garlic and herbs together. Mix thoroughly. Wrap in wax paper or plastic wrap. Cool in refrigerator or store in freezer to prolong shelf life.

I freeze my compound butter as a log then just cut off what I need. I don't have any problem slicing it

A quick summer side dish, these grilled garlic scapes garnished with lemon and Parmesan are  a delicious addition to any BBQ or cookout.

Grilled Garlic Scapes with Lemon and Parmesan

lbs fresh garlic scapes

tbsp oil butter

parmesan

Salt

Pepper

Brush or toss the garlic scapes in oil, and then toss them on a hot grill. Make sure the grill is really hot to get some nice grill marks on the scapes without them turning to mush.

Grill the garlic scapes for a minute or two on each side, and sprinkle liberally with salt and pepper.

Garnish the grilled garlic scapes with grated Parmesan, and freshly squeezed lemon.

Serve immediately.

I will have to try grilling the garlic scapes, Markus - it sounds delicious with the lemon and parmesan.  That will be the first time I try it that way.  Although, I do love that basil and garlic scape pesto, too! :)

I never knew that garlic scapes were a "thing," and I used to live in garlic-land. :) Our garlic is already beyond this lovely green stage, so I'll have to remember to try this next year while everything is still green!
