A comforting, healthy and creamy dish that’s ready in a flash. This light version of beef stroganoff is a little over 500 calories so it is recommended you pair it with a lower calorie breakfast or lunch on a diet day to ensure your calorie intake doesn't exceed 1200–1500.

Each serving provides 546 kcal, 41g protein, 64g carbohydrates (of which 9g sugars), 14g fat (of which 3.5g saturates), 8g fibre and 1g salt. 

Healthy beef and mushroom stroganoff

shallots, finely chopped

red pepper, seeds removed,

200 grams/7 ounces chestnut mushrooms, thinly sliced

garlic cloves, finely chopped

tbsp cider vinegar

level tbsp wholegrain mustard

150 milliliters/5fl oz beef stock

sirloin

milliliters/3½fl oz fat-free plain fromage frais

level tbsp roughly chopped gherkins

tbsp finely snipped fresh chives

salt and black pepper

A mayonnaise sauce made with hard-boiled eggs instead of raw, with the addition of capers, chervil, gherkins, and Worcestershire.

Gribiche Sauce

Worcestershire sauce

Ensure that all the ingredients are at room temperature, in particular the eggs and oil: this makes emulsifying easier.

Put the egg yolks, mustard, and vinegar in a mixing bowl. Add a pinch of salt and pepper.

Place the bowl on a dampened dishtowel, to keep it steady, and gradually pour in the oil in a thin stream, whisking all the time with the other hand, until it begins to thicken and forms an emulsion.

When all the oil has been incorporated and the mayonnaise is thick, stir in the lemon juice and adjust the seasoning to taste.

Add rinsed and chopped capers, chopped chervil, and chopped gherkin, with Worcestershire sauce, to the finished sauce.

Cut away and discard any large sinews from the livers, then set the livers aside. Heat about a third of the butter in a large frying pan, then gently fry the shallots and garlic for 3-4 mins unti l soft. Turn up the heat, add the livers, then fry until just browned on all sides. Add the brandy and port, boil down as quickly as possible – if the sauce catches light for an instant, then all the better. Remove the pan from the heat and leave to cool completely.

Season the livers generously, then tip the contents of the pan into a food processor with the tomato purée and remaining butter, and blitz until smooth. Push the mixture through a fine sieve into a bowl, taste for seasoning, then tip into a serving dish, banging the dish down on the tabletop to smooth out the surface. Place in the fridge to set.

Once the mixture has set, make the topping. Gently melt the butter in a small pan or in a bowl in the microwave, then leave for a min to settle and separate. Pour the yellow butter that has risen to the top into another bowl and discard the milky liquid. Leave the yellow butter to cool slightly, then mix in the thyme and peppercorns. Pour the mixture over the parfait and leave to set in the fridge. Serve with plenty of toast, sliced gherkins and chutney. Will keep for 2 days in the fridge.
