This apple-based Mulled Gin &amp; Tonic is easy to pull together and makes a wonderful Christmassy hot drink to serve to a crowd.Non-drinkers can enjoy the mulled apple juice just as it is.

Christmas Mulled Gin &amp; Tonic with Apple

apple juice

cranberries

Cinnamon stick - 10cm

Allspice berries

Star anise

ginger

Clementine

Cloves

120 ml/ 1/2 cup Mulled apple juice

ml/ 1 fl oz Gin

tsp Tonic Syrup

Bash the cinnamon stick a few times using a pestle and mortar and drop into a medium saucepan

Poke the cloves into the clementine and add to the pan

Tap the allspice berries to just split them and add to the pan along with all remaining ingredients

Put the lid on the pan and heat to almost boiling, then turn off the heat and leave to infuse for at least 1 hour&nbsp;

Strain through a fine-meshed sieve, decant into a screwtop bottle and refrigerate until required (keeps for up to 5 days)

Make the Mulled Apple Juice

Gently reheat sufficient mulled apple juice in a pan until hot but not boiling

Pour the gin and the tonic syrup into a heatproof glass and top with the hot apple juice

Garnish&nbsp;with cranberries, star anise and a cinnamon stick

serrano pepper, thinly sliced (seeded if you don't like it spicy)

cilantro leaves, stems removed and roughly chopped

Pour the lime juice and gin into the highball glass.

Add the cilantro and 4 to 5 slices...

Add the cilantro and 4 to 5 slices of serrano pepper. Muddle for 30 seconds, until the they've broken up.

Fill 3/4 of the way with ice cubes.

Fill the remainder of the glass with tonic.

Garnish with a bunch of cilantro and additional...

I've included instructions for making this with homemade tonic syrup as well as instructions for making this with a high quality tonic of your choice. My favorite is Fever Tree, but Q Tonic and Fentiman's are also pretty delicious. I like to make a gin and tonic with a straightforward, junipery London dry or Plymouth style gin. Beefeater, Plymouth, Broker's, and Tanqueray are all good options. If there's a craft distiller you love that makes a gin in one of these styles feel free to use that.

Add gin to a collins glass. If using...

Add gin to a collins glass. If using homemade tonic syrup add it now and stir, then add soda water. If using commercial tonic, add it now. Add ice to fill the glass, and stir. Squeeze a wedge of lime over the drink. Serve.

Frozen Gin &amp; Tonic with Raspberries &amp; Mint

raspberries (chilled)

tsp Tonic syrup (chilled)

tsp Sugar cane syrup (chilled)

tsp Lime juice (chilled)

Mint leaves

300 g/ 10 1/2 oz Ice cubes

Raspberries

Lime

Put the ice into your blender and add all remaining ingredients. (Do ensure your blender is powerful enough to work with ice - not all blenders are (see my notes)). Securely put the blender lid in place

Start your blender slowly, allowing it to begin the break down the ice. Pulse as necessary. Once the ice is beginning to break down increase the speed and continue to blender until the contents of the blender are slushy and no obvious lumps of ice or fruit remain

Pour into 2 glasses and use the additional mint, raspberries and lime wedges to garnish. Serve immediately

Fruit Infused Gin and Tonic Cocktails

Strawberries

Orange (Sliced)

Cucumber

Sage Leaves

Kiwi

Lemon

oz tonic water (4 ounces per drink)

oz gin (1.5 ounces per drink)

Fill a glass with ice

Add in the desired fruit and/or herbs

Pour 4 ounces tonic water into each large wine glass.

Pour in 1 to 1 1/2 ounces gin into each large wine glass.

Enjoy!

Three Creative Ways with Gin and Tonic

m/1 oz gin

ml brewed hibiscus tea

lemon juice

ml/1 oz fresh grapefruit juice

An hour before making cocktails make earl grey infused gin by steeping one bag of good quality earl grey tea in 250ml/1 cup of gin for no longer than 1 hour.

To make the cocktail pour 25ml/1oz of earl grey infused gin into a short glass with a few ice cubes. Top with tonic water and garnish with a lemon slice.

For the Earl Grey

In a short glass pour gin, cooled hibiscus tea brewed according to package directions and lemon juice over ice cubes and top with tonic water. Garnish with a lemon twist.

For the Hibiscus and Lemon

In a cocktail shaker muddle rosemary with grapefruit juice, add gin, ice and shake.

Strain into a short glass and top with tonic water. Garnish with a rosemary sprig.

For the Rosemary and Grapefruit

A purple gin and tonic made with Empress Gin.

Add all of the ingredients into a glass filled with ice.

Grim and Tonics are sure to raise your spirits on Halloween, when made with smoky dry ice and  totally cool blue skull ice cubes.

water ((This will make 4 blue skulls))

blue butterfly pea powder ((add more if a darker blue is desired))

water ((This will make 4 sphere molds))

Make ahead: Add butterfly pea powder to 2 cups of water in a small saucepan and heat until dissolved. Allow to cool and then filter blue water through a coffee filter, changing out the filter as needed. Pour blue water into skull mold and freeze overnight. Add plain water to the sphere mold and freeze. Repeat until you have 4 skulls and 4 spheres.

Add the round ice cube to the bottom of the glass and then add 1-1½ oz. of Empress 1908 gin. Add lime garnish and tonic water . The tonic will turn the blue gin, purple. (Sooo pretty!!) Now add the blue skull ice cube and top with more tonic if desired. garnish with lavender and dry ice for effect. (Warning: Use caution when handling dry ice and take care not to ingest dry ice, it is not edible and will burn)

Q Mixers Tonic Water

Juice the lime and set aside the lime juice for another use. Thinly slice the remaining rind and pulp, and place in a cocktail shaker with gin and lemon verbena. Muddle the ingredients together for 1 minute. Strain the gin into a highball glass filled with ice. Top off with tonic water.

To finish, spoon the muddled lime rind and pulp onto the surface of the cocktail. Garnish with a fresh sprig of lemon verbena.
