Gin, Grapefruit and Elderflower Cocktail

Hendrick's gin (or other less juniper forward gin)

fresh ruby red grapefruit juice

Elderflower liqueur

grapefruit (optional)

rosemary (optional)

Combine the gin, grapefruit juice and elderflower liqueur in a cocktail shaker.

Add ice and shake for 10 to 15 seconds.

Strain over ice into a rocks glass and garnish with a grapefruit slice and rosemary sprigs if desired.

Classic Gin Fizz

maple syrup or simple syrup

lemon juice (1 lemon)

egg white (or for vegan, substitute 2 tablespoons aquafaba*)

soda water

Place the gin, maple syrup, lemon juice, and egg white in a cocktail shaker. Fill the shaker with ice and shake.

Pour the drink into two glasses and top with the soda water, which forms the egg white foam on top. Serve immediately.

I've included instructions for making this with homemade tonic syrup as well as instructions for making this with a high quality tonic of your choice. My favorite is Fever Tree, but Q Tonic and Fentiman's are also pretty delicious. I like to make a gin and tonic with a straightforward, junipery London dry or Plymouth style gin. Beefeater, Plymouth, Broker's, and Tanqueray are all good options. If there's a craft distiller you love that makes a gin in one of these styles feel free to use that.

To brew strong tea

Put gin, tea, fresh lime juice, simple syrup and fresh thyme leaves in a cocktail shaker.

Gently muddle for more thyme flavor.

Add ice then shake well.

Strain the aromatic cocktail into a short cocktail glass over fresh ice and garnish with a spring or two of fresh thyme.

Perfect Mother's Day cocktail!  So delicious.  Easy to sip!  We loved the pink color brought on by the Empress gin. We added some lemon rind to the simple syrup we prepared. Be careful though, they are potent!
