This vegan Asian Salad Dressing is fresh, creamy, and oil-free. The bright flavor of the ginger is mellowed by the cashews, while rice vinegar and lime add a zesty acidity and soy sauce adds a little umami. Perfect for topping salads or using as a dip.

Asian Salad Dressing (Creamy &amp; Oil-free)

cashew butter ((or peanut butter))

water

lime juice

soy sauce

tbsp rice vinegar

maple syrup

ginger

tsp Sriracha sauce

garlic

Peel a thumb-sized piece of ginger with a vegetable peeler or spoon. Grate or roughly chop the ginger until you have 1 tablespoon.

Peel 2 cloves of garlic.

Add the ginger, garlic, and all of the other ingredients to a high-speed blender. Blitz to combine.

Serve and enjoy or store for later.

Japanese Ginger Salad Dressing Recipe

carrots (roughly chopped)

onion

celery (roughly chopped)

rice vinegar

canola oil

sugar (or honey)

soy sauce ((I always buy GF and low sodium.))

garlic clove

Roughly chop all the produce. Place in the blender.

Add all other ingredients to the blender. If you are sensitive to sodium, start with 1 tablespoon of soy sauce. You can always add more if needed.

Cover the blender and turn on high. Puree until smooth.

Taste, then add more soy sauce if desired.

Refrigerate until ready to serve.

Hibachi Ginger Dressing

fresh ginger, minced

lemon juice

Begin the recipe by mincing the 1/2 cup onion, 1/2 teaspoon garlic, 2 tablespoons celery, and the 2 tablespoons of fresh ginger.

*You may also roughly chop all of these ingredients into small pieces and add them to a blender instead to process for 1 to 2 minutes.

Next, to the blender, add the 1/2 cup olive oil, 1/3 cup rice vinegar, 2 tablespoons ketchup, 4 teaspoons soy sauce, 2 teaspoons granulated sugar, 2 teaspoons lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon ground black pepper.

Place the top on the blender and blend the ingredients at high speed for about 30 seconds or until the mixture is pureed.

Serve on top of a simple salad and store any leftovers in the refrigerator to use later. Enjoy!
