Bourbon Peach Glazed Salmon

peach jam, homemade preferred

tbsp honey

bourbon

Preheat the broiler to high. Season the salmon with salt and pepper on both sides. Add salmon to a pan sheet pan.

Whisk the peach jam, honey, bourbon, garlic and chipotle powders until smooth.&nbsp;Brush the glaze upon the fish covering the top and sides.&nbsp;

Broil the salmon at least 6 inches from the heat element to an internal temperature of 145°F - about 10 minutes depending on the thickness of your fillets. Keep an eye out to make sure the salmon glaze doesn't burn.

Serve this peach glazed salmon with sauteed whole green beans for an elegant touch or try roasted broccoli or asparagus.

Optional: While the salmon is cooking, considering adding any extra peaches to a saucepan and cooking them down over medium heat with a little honey, bourbon, and a pinch of salt. Spoon the cooked peaches over the finished salmon or serve alongside the vegetables.

Honey Garlic Sauce Salmon

olive oil

butter, (divided)

skin-on salmon fillets, (each fillet should be around 4-ounces)

cumin

smoky or sweet paprika

Italian Seasoning

salt and fresh ground pepper, (to taste)

garlic, (minced (about 1 tablespoon minced garlic))

honey

lime juice

green onions (for serving)

lime wedges (for serving)

Heat olive oil and 1 tablespoon butter in a large (10 to 12 inches) cast iron skillet over medium-high heat.

In a small bowl combine cumin, paprika, Italian Seasoning, salt, and pepper; mix until incorporated.

Season salmon fillets with prepared seasoning and transfer to skillet, skin side down. (PLEASE SEE MY NOTES)

Cook the fillets for 4 to 5 minutes, or until cooked three quarters of the way through.

In the meantime, combine honey, soy sauce, and lime juice in a bowl; whisk until well combined.

Flip the fish over and add 1 tablespoon butter to the skillet. (If working in batches, at this point you want to place all your fillets back in the skillet.)

Wait until butter melts and add minced garlic over the fish.

Pour the prepared honey soy sauce over the fish and continue to cook for 2 more minutes, or until cooked through and sauce has slightly thickened. Spoon the sauce over the fillets while cooking.

Remove from heat.

Garnish with sliced green onions and serve with lime wedges.

Brown Sugar Glazed Salmon Recipe

butter

(4 to 6 ounces each) skin-on salmon fillets

salt and black pepper

coconut oil

soy sauce

Worcestershire sauce

brown sugar

ginger

lime

juice of 1 lime

black pepper (to taste)

cilantro

green onions, (for garnish)

Heat olive oil and butter in a large skillet over medium-high heat.

Season salmon fillets with salt and pepper and transfer to the skillet, skin-side up. (SEE MY NOTES)

Cook for about 5 to 6 minutes, or until browned and cooked about three quarters of the way through.

Flip over and cook for 2 more minutes.

FOR THE SALMON

In a mixing bowl combine melted coconut oil, soy sauce, Worcestershire sauce, sugar, ginger, lime zest, lime juice, and fresh ground black pepper; whisk until thoroughly combined.

Once the fish has cooked on both sides, lower heat to medium and add the brown sugar glaze to the pan.

Swirl it around and cook for 1 minute, or until it starts to thicken, flipping each fillet around to coat.

Garnish with cilantro/parsley and green onions; serve.
