Only recently have we gotten on the overnight oats bandwagon. And since then, we are freaking obsessed and have made these Paleo overnight oats like 3 or 4 times in the past 2 weeks. They're kind of addicting!&nbsp;

Paleo Overnight Oats

soft nuts ((we

tbsp chia seeds

1.5 tsp ground flax seed

tbsp maple syrup

tsp vanilla extract

sea salt

full fat coconut milk ((or nut milk of choice))

berries

Raw cacao nibs

Nut butter

Cinnamon or other spices you

In a food processor, pulse nuts until they are grainy. Then, transfer to a mason jar.&nbsp;

Add chia seeds, ground flax, maple syrup, vanilla, sea salt and coconut milk to jar. Stir to combine everything. Cover and place in the fridge overnight or until it sets.&nbsp;

You can enjoy cold or reheat in the microwave or on the stove. I like to scoop a little out of the mason jar into a small bowl, heat for 30 seconds and then add all the toppings! Enjoy!&nbsp;

You can easily make overnight oats without chia seeds and replace them with yogurt for a thick and creamy consistency.

Overnight Oats Without Chia Seeds

oats

milk (I use unsweetened soy milk)

maple syrup

vanilla extract

salt

yogurt

raspberries (thawed)

cinnamon

Add the oats, milk, maple syrup, vanilla extract, and a tiny pinch of salt to a sealable container (e.g., Weck jar, Mason jar).

Stir to combine. Close the jar airtightly and place it in the refrigerator overnight (or for at least 4 to 6 hours).

The next day, stir in the yogurt and add your favorite toppings. I used thawed raspberries, mixed with a dash of cinnamon.

I've never thought about eating overweight oats, but I've recently started eating oatmeal again.  I'm also substituting part time, which requires me to get up very early,  so I don't like the idea of cooking oatmeal at 5:30 am. I thought I'd give this a try, especially since you didn't include the chia seeds. I was so pleasantly surprised at how refreshing and delicious it was. I had fat-free vanilla Greek yogurt on hand and added last night,  and it gave the oatmeal a very nice texture.  All I added was a dash of cinnamon and a few chopped pecans.  Thank you for this recipe. I'll be making this again,  for sure!

So good and so easy! I love that it's creamier than the usual ones!
