Recipe video above. Warm Goat’s Cheese Salad is a classic starter found in bistros all across France. Called Salade de Chêvre Chaud, it&#039;s a fresh leaf salad with nuts and bacon, and crowned with pan-fried goat’s cheese medallions that are golden outside and oozing inside. Simple to make, this most French of French salads makes for a chic change from the usual crumbled goats cheese number!Serves 4 as a starter, or 2 as a meal

Warm French Goat's Cheese Salad (Salade de Chêvre Chaud)

tbsp flour (, plain / all-purpose)

breadcrumbs (regular kind, else sub panko; (Note 2))

Slice cheese: Cut goat&#039;s cheese if necessary to create ~ 1.25cm (1/2&quot;) thick rounds.

Place flour, whisked egg and breadcrumbs in 3 separate, small bowls.

Crumb cheese: Coat cheese in flour, shake off excess. Dip in egg, allow excess to drip. Coat with breadcrumbs, pressing to adhere. Place on plate and set aside.

Crumb goat&#039;s cheese:

Toast nuts: Spread nuts in a layer on a tray. Toast in a 180C / 375F oven for around 5 minutes until they are lightly browned and smell toasty. Immediately transfer to a small bowl to cool. Alternatively, toast in a skillet over medium heat (walnuts will take longer than pine nuts, so best to do in separate batches).

Cook bacon: Place bacon in a cold non-stick pan. Turn the stove to medium and let the pan warm up. Once the fat starts to melt, turn the heat to high. Stir and cook bacon until golden. Drain excess fat on paper towels.

Dressing: Shake dressing ingredients in a jar.

Begin assembling salad: Place lettuce in a bowl, casually arrange tomatoes, then sprinkle with nuts and bacon.

Prepare salad:

Melt butter in a small non-stick pan over medium-high heat.

Pan-fry cheese: Once butter is foaming, cook crumbed cheeses for 1 - 1 1/2 minutes on one side until golden. Carefully turn, cook other side for 1 minute until golden. Remove and drain on paper towels.

Pan-fry cheese:

Drizzle each salad with 2 tbsp of dressing. Arrange 2 crumbed cheeses on top of each salad. Sprinkle with chives.

Serve immediately, while cheese is hot and melty inside!

California Chicken, Avocado and Goat Cheese Salad

fresh parsley, chopped ((or 1 tablespoon dried))

fresh basil, chopped ((or 1 tablespoon dried))

smoked paprika

onion powder

cayenne

kosher salt and pepper

romaine lettuce, chopped

strawberries,

watermelon radishes, thinly slice

Persian cucumbers, sliced

herbed goat cheese, crumbled

avocado, sliced

almonds,

olive oil

balsamic vinegar

apple cider vinegar

honey

cayenne ((to taste))

1. In a bowl, combine the chicken, olive oil, garlic, parsley, basil, paprika, onion powder, cayenne, salt, and pepper. For added flavor, allow the chicken to marinate 1 hour or overnight.2. Preheat your grill, grill pan or cast iron skillet to medium high and brush the grates with oil.3. Grill the chicken for 5-8 minutes per side or until the chicken is cooked through. Remove from the grill and thinly slice the chicken.4. In a large salad bowl, toss together the lettuce, strawberries, radishes, and cucumbers. Add the chicken on top of the salad along with the goat cheese, avocado, almonds, and a handful of micro greens. Serve with the honey balsamic (below).

1. In a glass jar, combine the olive oil, balsamic vinegar, apple cider vinegar, honey, cayenne, and a pinch each of salt and pepper. Seal the jar and shake well. Taste and adjust seasonings as needed. Keep stored in the fridge for up to 1 week.

Honey Balsamic Vinaigrette

You can serve this salad cold or at room temperature, but my personal favorite it to keep the greens and persimmons cold and have everything else warm. It's oddly the perfect balance.

Cranberry Roasted Butternut Persimmon Salad with Fried Goat Cheese.

butternut squash

maple syrup

cinnamon

ginger

cranberries

log cut cheese (sliced into 1/4 inch rounds, 10)

buttermilk (or 1 egg beaten)

bread crumbs

greens

persimmons (quartered)

pecans

Preheat the oven to 425 degrees F.

Spread the butternut squash out in a single layer on a baking sheet. Drizzle 2 tablespoons olive oil, maple syrup, cinnamon, ginger, cayenne, salt and pepper, toss well to coat. Roast in the oven until the butternut squash is tender, 20 to 25 minutes, stirring halfway through cooking. Remove from oven and stir in cranberries.

Meanwhile, heat the apple cider and the cider vinegar in a small saucepan over high heat and boil until it has reduced to 1/4 cup, about 6-8 minutes. Remove from the heat and whisk in the remaining 1/2 cup olive oil and the mustard. Season with salt and pepper.

To make the Fried Goat Cheese. Heat 2 tablespoons olive oil in a skillet over medium heat.

Add the panko to one small bowl, then add the buttermilk to another small bowl. Carefully dip the rounds of goat cheese, first through the buttermilk, and then dredge through the panko. Carefully add to the hot skillet and cook for 2-3 minutes per side or until golden. To make these in advance, fry as directed and then warm in a 300 degree oven for 5 minutes.

In a large salad bowl, toss together the lettuce, roasted squash, persimmons, and pecans. Add the dressing and toss once more. Top with the fried goat cheese. Enjoy warm or at room temperature.

All-in-one salads are the easiest supper dishes of all. This low-calorie goat's cheese and walnut salad takes only 15 minutes to prepare, making it a great midweek meal or last-minute dinner party starter.

Goat’s cheese and walnut salad

150 g (5 ounces) walnut pieces

x 100 g packs goat's cheese, crumbled

To make the salad dressing, mix the vinegar, olive oil, caster sugar, salt and freshly ground black pepper thoroughly. Put to one side.

Put the radicchio, watercress and onion in a large bowl. Pour over the dressing and toss well.
