(60 milliliters) pure maple syrup

tbsp honey

tbsp canola oil oil

(135 grams) rolled oats

(80 grams) flaked almonds, chopped

(170 grams) Brazil nuts, finely chopped

linseed meal (or use hazelnut or almond meal)

(160 grams) pepitas (pumpkin seeds)

(240 grams) sunflower seeds

(45 grams) finely chopped dried apple

tbsp flaxseed oil (see note)

Treat yourself to this better-for-you low calorie rocky road made with dark chocolate, oven roasted almonds and goji berries.

(3 ⁄4 cup) blackcurrant and chia pieces (see notes)

(1 ⁄ 3 cup) glacé ginger

(1 ⁄4 cup) goji berries, plus 2 tbsp, extra

(3 ⁄4 cup) coconut flakes, toasted

Pistachios, toasted

20.00 ml raw cacao nibs

dark chocolate (85% cocoa), chopped

16.80 gm coconut oil

This decadently rich and creamy Mexican Dark Chocolate Mousse with Pistachios and Sea Salt is so elegant yet easy to make! It takes less than 30 minutes to whip together and is the definition of gourmet made simple.

Mexican Dark Chocolate Mousse

heavy cream, divided

egg yolks,

dark chocolate (chopped bar or chocolate chips)

cinnamon

cayenne pepper (or more to taste)

corn syrup

butter

sugar

vanilla extract

pistachios

berries

dark chocolate

Combine 1/2 cup of the cream with the lightly beaten egg yolks.

In a medium saucepan melt the dark chocolate, corn syrup and butter over medium heat until melted, stirring regularly to combine and prevent the chocolate from burning.

Stir the cinnamon and cayenne pepper into the chocolate mixture until combined.

Add the egg and cream mixture to the chocolate in the saucepan, stirring constantly for 3 minutes.

Remove the saucepan from heat and cool to room temperature.

Beat remaining cream, powdered sugar and vanilla until soft peaks form.

Gently fold the whipped cream into the chocolate mixture until combined and no white streaks remain.

Pour into serving bowls and chill in the fridge (covered with plastic wrap) overnight or for at least 6-8 hours. You can also chill in the freezer for 3 hours if you are in a hurry, although this method is not preferred.

Serve topped with chopped pistachios, goji berries, chopped dark chocolate and flaked sea salt.

Wow, I love this Mexican dark chocolate mousse idea! The flavor

This seriously is heaven in a bowl! Chocolate mousse has always been a fave and I love the added pistachios and sea salt. And those bowls are absolutely adorable!! This is definitely going on the to-make list!

I really liked this mousse. The spices were great and I added the amount the recipe called for, but I think I'll add more next time just because I want a little more kick :). I think it made more than 6 servings, so next time I'm also going to use smaller dishes for each portion. It is VERY rich and full of chocolate flavor and as I've gotten older, I find that I can't each as much chocolate in one sitting as I used to.

In this recipe, I suggested 30 grams of rock sugar.  The sugar cuts the tartness of the hawthorn, but you can choose to add no sugar.  Honey or brown sugar would be great alternatives too.I added a bit of ginger just to warm the stomach a bit.  However, it is not necessary to add the ginger.Chrysanthemum flowers and some green tea can also be added to strengthen the immune system and to boost eye health.You can also drink this tea cold, but for better digestive results, drinking it warm is recommended.

Three Reds Digestive Tea 三紅茶

g hawthorn

g Dried red dates (pitted (small ones are preferred))

g Dried goji berries

g Rock sugar ((from cane))

Ginger

L Water

Dry hawthorn usually comes sliced.  But if you have whole hawthorn, just slice them into small pieces

Wash the hawthorn, red dates and goji berries

Prepare 2 small slices of ginger

Add 1 L of water in a pot and add the hawthorn, red dates, goji berries and ginger

Bring to a boil, turn the heat down to low, add 30 g of rock sugar and cook for 30 minutes

Serve

After finishing the first batch of tea, you can add another 500 ml of water to the ingredients and repeat step 5 with 15 g of sugar  It won’t be as tasty as the first time, but you should still get some taste from it

Serve up this fruity mocktail on lazy summer days when you crave a refreshing drink. It's flavoured with goji berries, raspberries, ginger and honey

Tip the goji berries, raspberries and ginger into a large jug. Pour over 850ml boiling water and leave to cool. Transfer to the fridge to infuse for at least 2 hrs, or overnight.

Strain through a sieve into a clean jug, then sweeten with the honey. Fill four glasses with the ice, pour over the drink and garnish with the fresh berries and mint, if you like.
