These delicious rocky road squares are decidedly more-ish.

Granita rocky road

dark chocolate, chopped

unsalted butter, chopped

icing sugar mixture (40 grams)

mini marshmallows (30 grams)

red glace cherries, halved

coconut

Watermelon granita

watermelon (1.8kg)

60 g stem ginger in syrup

limes

½ a bunch of fresh mint (15 grams)

natural yoghurt

This naturally sweetened summer mango granita is the perfect way to end a backyard dinner. This Italian dessert is a must try for any summer party.

3 Ingredient Mango Granita

mangoes (about 2 cups worth)

lime (about 4 tablespoons)

lime

maple syrup (or to taste)

water

salt

Wash and dry the mango. Peel the mango and discard the skin.

Cut the mango away from the pit and discard the pit. Chop it into small chunks. Place the chunks into a food processor or blender.

Using a nutmeg grater, get the rind off the lime and add it to the blender.

Cut the lime into half and squeeze all the juice into the blender as well.

Add the water and salt to the blender.

Blend everything so that it's finely pureed.

Place the blended mango into a freezer safe container and cover it with a lid. Place the container into the freezer and let it freeze for about an hour.

Remove it from the freezer and using a fork, scrape the semi frozen mango. Once all of it has been scraped, place it back into the freezer for another hour or so.

Repeat step 8 twice more.

Serve the frozen mango granita as a dessert on a hot summer day and enjoy it frozen.

This  Strawberry Balsamic Black Pepper Granita recipe is a zippier version of the basic Italian ice and so easy I can assure you anyone can make it.

Strawberry Balsamic Black Pepper Granita

sugar (130 grams)

white balsamic vinegar, optional

black pepper, optional

strawberries*

The name says it all.  Combine the water and sugar in a small sauce pan.  Bring to a rolling boil.  Boil for 1 minutes.

Remove from the heat and stir in the balsamic vinegar and black pepper.  Cool.

Simple Syrup

While the simple syrup is cooling, rinse the strawberries and remove the green tops. Slice the strawberries.  There&#39;s no special size here, just slice them.

Place the strawberries and the cooled syrup in a processor or blender.  Process or blend until smooth, scraping down as necessary.

Pour into the pan and freeze for several hours until it&#39;s about 3/4 frozen.  Scrape with a fork to fluff it up.    Refluff it before serving.

If the granita freezes hard, just let it sit for a few minutes at room temperature to soften. Store in the freezer.

Yield:  About 1 quart.

This is such a delightful summer granita!  The balsamic enhances even mediocre strawberries. Next time I'll use the full amount of black pepper.  Thanks for this keeper recipe!
