Bream fritters with chilli-ginger pumpkin

butternut pumpkin, peeled, chopped

(250 milliliters) milk

tsp turmeric

tsp coriander seeds

tsp garam masala

brown sugar

red chilli, thinly sliced

tsp ginger

lemon

(100 grams) rice flour

tbs sesame oil

milliliters soda water

Plain flour, to dust

Sunflower oil, to deep-fry

curry leaf sprigs

Coriander, micro coriander and lime cheeks,

tbs rice wine vinegar

tsp caster sugar

Asian (red) eschalot, thinly sliced

My family often drank porridge during breakfast, but often inexplicable, there is no appetite, especially want to drink white porridge, so the side dishes are also one of the dishes I often study. Today this is simple and super refreshing

There are many seafood in supermarkets. It seems that there are many kinds of them. After I bought this large one, remember to soak it overnight. Otherwise, remember to change the water a few times when it is too salty. It is better to find a larger container

The soaked jellyfish continue to be rinsed under the faucet, then drain the water and cut into fine threads

Wash the purple cabbage and cut into fine shreds. The side dishes can be replaced with cucumber, carrot and cabbage at will.

The cut purple cabbage is placed on top of the jellyfish. I like spicy food so I put some spicy minced millet

In another small bowl, pour the appropriate amount of two spoons of cold sauce, one spoon of light soy sauce, a little balsamic vinegar, sesame oil, chicken powder and stir well

Stir the sauce evenly and pour it into the bowl

Pour in the ground ginger, season with a little sugar, and stir thoroughly with chopsticks. You can put it in the refrigerator for a while for a better taste.

A super delicious cold dish, best with rice porridge, hot and sour and crispy, super refreshing, every time you eat it directly

‘Black Fungus’ is an edible wood fungus. It is similar to mushrooms. I agree it is a bad naming but it is called ‘Black Fungus’ in Australia. There are many different names for this food. Some of them are even more horrible names. It is called ‘Kikurage’ in Japanese. ‘Black Fungus’ is quite popular in many Asian countries including Japan. Dried Black Fungus is available from Asian grocery stores. It can be used for stir-fries, salad, soup, and etc. If you love the crunchy texture of Black Fungus, you will enjoy this soup.

Black Fungus & Asian Mushroom Soup

Black Fungus

Sesame Oil

(3 teaspoons) Soy Sauce

Salt & White Pepper

Ginger

Spring Onion *finely chopped

Soak Dried Black Fungus in cold/warm water until softened. Wash very well, drain and cut into bite-size pieces.

Prepare Mushrooms. Trim, clean, and cut OR tear into the size that is easy to eat.

Place Chicken Stock, Black Fungus, Asian Mushrooms, Sesame Oil and Soy Sauce in a saucepan, cover with a lid and bring to the boil. Cook until Mushrooms are cooked.

Add Salt & White Pepper to taste, then add grated Ginger and stir. *Note: The amount of Salt depends on the saltiness of the Stock.

Add some finely chopped Spring Onion and enjoy.
