Ladolemono Greek Salad Dressing Recipe

lemon juice (Juice of 2 large lemons)

oregano

garlic (minced)

salt

black pepper

extra virgin olive oil

Put the lemon juice, oregano, garlic, salt and pepper in a bowl. Whisk to combine.

While you are whisking vigorously, slowly drizzle in the extra virgin olive oil.

In a small bowl, whisk together the olive oil, vinegar, garlic, oregano, mustard, salt, and several grinds of pepper.

Greek Salad

romaine lettuce

cherry tomatoes, halved

green bell pepper

kalamata olives

marinated artichokes, havled

English cucumbers

red onion

oz feta cheese, crumbled

lemon juice

Add all of the ingredients to a large mixing bowl.

If you are making the Greek dressing, add all of the ingredients to a food processor or blender and pulse or blend until well combined.

If you are using the Greek dressing, drizzle a little of the dressing over all of the salad ingredients. Use a large mixing spoon or salad tongs to toss the salad until well combined. Add more dressing to the salad if needed or if you are not using a dressing, add more salt, pepper, and oregano to taste.

Store in the fridge for a week.

Note: when you take it out for your salads either take it out a few minutes before you need it or microwave it for fifteen seconds to soften it.

In this sheet-pan chicken recipe, chicken thighs, veggies, and big hunks of tangy feta are coated in garlicky, lemony Greek salad dressing and baked until everything is tender, golden brown, and swimming in bold Mediterranean flavor. Serve on its own, or with crusty bread for getting the rich and flavorful pan sauce.

Greek Sheet-Pan Chicken

lemon juice Juice of 2 large lemons

zucchini,

orange bell pepper,

Italian parsley, (for garnish)

Get ready: Position a rack in the middle of your oven and heat it to 425°F.

Make the ladolemono Greek salad dressing. In a medium mixing bowl, add the lemon juice, oregano, garlic, salt, and pepper and whisk vigorously to combine. While whisking, drizzle in the olive oil and continue whisking until emulsified.

Coat the veggies. On a large sheet pan, spread the onions, zucchini, bell pepper, and tomatoes. Season well with salt and pepper, then pour about 1/4 cup of the sauce all over the veggies. Toss to coat, then spread the vegetables out so they are all touching the surface of the pan.

Add the remaining ingredients. Season the chicken on both sides with salt and pepper. Nestle the chicken, olives, and chunks of feta in between the vegetables and drizzle with the remaining ladolemono sauce, making sure the chicken especially is covered with the sauce.

Bake. Bake on the center rack of your heated oven until the chicken is cooked through, about 35 minutes. For more color, transfer the chicken to the top rack about 6 inches away from the broiler. Broil for a couple of minutes, watching closely to make sure the chicken and vegetables gain some color but do not burn.

Finish and serve. Remove from the oven and spoon the pan juice all over the chicken. Garnish with the parsley and serve.

Greek Sheet Pan Chicken

This Greek salad dressing is a simple oil and vinegar dressing that comes together in less than 5 minutes: the perfect easy vinaigrette for salads.

In a medium bowl, whisk together the red wine vinegar, lemon juice, Dijon mustard, onion powder, oregano, kosher salt and black pepper.

Gradually whisk in the olive oil, adding 1 tablespoon at a time and whisking until it incorporates, until an emulsion forms. Serve immediately. Store refrigerated and bring to room temperature before serving (keeps at least 2 weeks). The dressing may separate after sitting which is ok; simply whisk again before serving.
