This recipe is restaurant quality!  Our new daughter in law has not stopped talking about how delicious it was!   The only thing I changed was I cooked it on the grill in a stainless steel baking pan and added some fresh spinach 5 minutes before I pulled it off!

For such a quick and easy recipe, this dish is awesome!

OMGosh, this might be my favorite dish ever! I served this over a bed of fresh baby spinach with roasted beets on top. I used 1 Tbsp fresh oregano and 1/2 Tbsp dried dill because that's what I had. Absolutely delicious. Can't wait to make this again.

Y’all, this was sooo good.  I really like the warm salmon with the cool feta mixture.  I am not a fan of dill but it was not overpowering and really complimented the fish.  I will definitely make this again.

I made this for dinner on Friday. My husband and I were blown away with how good it is. I wished I had made more so I could have it for leftovers too. Oh well, I am making it again tomorrow for dinner instead.

Delicious! I had left over topping.. do yourself a favour and save some for the next day. I put this on top of my eggs the next day. A piece of toast, bed of Arugula, over easy or poached eggs with the greek topping over it all. The left over smashed potatoes were dynamite the next day with this too!

So much flavor and color!  A beautiful dish aesthetically as well. I served it over rice pilaf.

When you generate a shopping list, it says 48 oz total for the salmon.  So those ARE 12 oz salmon fillets.

This Greek Salmon Is As Beautiful As It Is Delicious

Greek marinated chicken is the most tender and juicy chicken you&#39;ll ever taste!

Greek Marinated Chicken

olive oil

Greek yogurt (plain)

lemons lemon

garlic (minced

coriander

onion powder

salt

lbs. chicken breast

Whisk marinade ingredients together in a large mixing bowl.

Toss the chicken breasts in the marinade to coat. Cover the bowl and chill in the refrigerator for 30 minutes up to 24 hours. Remove the meat from the fridge about 30 minutes prior to cooking to let it come to room temperature.

Preheat oven to 400°F and heat a lightly oiled grill pan over medium-high heat on the stovetop.

Sear the chicken breasts on one side for 5 minutes, turn them over and bake for 15 minutes or until done through. Let chicken rest for 5 minutes before serving.

This instant pot greek chicken is covered in a olive oil and herb marinade and cooked in 10 minutes with the rice for a one pot meal. This recipe is so easy and great for meal prep greek chicken bowls. It's gluten free and dairy free too!

Instant pot greek chicken and rice

lbs boneless skinless chicken breast

red wine vinegar

garlic

lemon

basil

thyme

pepper

onion

zucchini (quartered)

chicken broth

jasmine rice

parsley (optional)

feta (optional)

Put chicken and marinade ingredients in a freezer bag or container and allow to marinade while you prepare the rest of the ingredients, at least 15 minutes or overnight.

While it’s marinating, add 2 tablespoons of olive oil to a 6qt Instant Pot and turn to saute mode. Once it’s hot, add the marinated chicken and cook for 2-3 minutes on each side to create a brown and crispy crust. You may need to work in batches of 2-3 to get the chicken crispy. Adding too much chicken to the pan at once can cause the chicken to steam rather than sear. Discard any extra marinade.

When all the chicken is cooked, add it all back to the instant pot if you cooked in batches then add the chopped onion and zucchini and continue to cook for 2-3 more minutes.  Add the chicken broth, lemon juice and rice and stir, then close the lid and cook on high pressure for 7 minutes. When it’s done, use a wooden spoon to turn the valve from sealing to venting to quick release the pressure. When it’s ready,  open the lid and add fresh parsley, an extra squeeze of lemon and crumbled feta if desired.

Mix the Greek grilling marinade

Add the Greek yogurt, garlic, lemon zest, lemon juice, olive oil, red wine vinegar, honey, &amp; oregano to a bowl or jar. Season with 2 teaspoons kosher salt &amp; ground black pepper or crushed red pepper, as desired. Whisk or shake to combine. Set aside, or store in an airtight container in the refrigerator up to 3 days.

Marinate

Pour the Greek grilling marinade over your meat or veggies of choice. Marinate for at least 6 hours or up to overnight.

Grill

Made this marinade as is today for grilled chicken kebabs. I marinated the chicken for about 8- 9 hours. So tender and juicy!  Used cilantro for garnish.. delicious!

Tried this recipe out and was surprised I had all the ingredients. I put it in a charcoal pan on top of the stove with a tiny bit of olive oil, then finished cooking in the oven. The chicken was so moist with lots of wonderful flavor. I can't wait to try it again on my charcoal grill (outside)!

I tried the marinate yesterday, and my family loved it! We marinated boneless/skinless chicken thighs and it tasted great. We made a Greek salad and roasted potatoes to go with it. This is going to be a mainstay for us. Delicious!
