This easy Greek salad recipe is a flavorful, refreshing summer side dish! If you make it ahead for a gathering, save a few mint leaves to add right before serving.

Greek Salad

olive oil

red wine vinegar

garlic (minced)

oregano

Dijon mustard

sea salt

black pepper

English cucumber (cut lengthwise, seeded, and sliced ¼-inch thick)

green bell pepper

cherry tomatoes

feta cheese

red onion

Kalamata olives

mint leaves

Make the dressing: In a small bowl, whisk together the olive oil, vinegar, garlic, oregano, mustard, salt, and several grinds of pepper.

On a large platter, arrange the cucumber, green pepper, cherry tomatoes, feta cheese, red onions, and olives. Drizzle with the dressing and very gently toss. Sprinkle with a few generous pinches of oregano and top with the mint leaves. Season to taste and serve.

Traditional Greek Salad Recipe

Medium juicy tomatoes

cucumber

green bell pepper (cored)

Greek pitted Kalamata olives (a handful

kosher salt (a pinch)

extra virgin olive oil

Greek feta cheese

Cut the red onion in half and thinly slice into half moons. (If you want to take the edge off, place the sliced onions in a solution of iced water and vinegar for a bit before adding to the salad. I do this in the video).

Cut the tomatoes into wedges or large chunks (I sliced some into rounds and cut the rest in wedges).

Cut the partially peeled cucumber in half length-wise, then slice into thick halves (at least 1/2&quot; in thickness)

Thinly slice the bell pepper into rings.

Place everything in a large salad dish. Add a good handful of pitted kalamata olives.

Season very lightly with kosher salt (just a pinch) and a bit of dried oregano.

Pour the olive oil and red wine vinegar all over the salad. Give everything a very gentle toss to mix (do NOT over mix, this salad is not meant to be handled too much).

Now add the the feta blocks on top and add a sprinkle more of dried oregano.

Serve with crusty bread.

Add olive oil, salt, pepper, lemon zest and juice, honey mustard, crushed oregano and thyme leaves into a jar. Shake well and set aside.

Halve and slice an English cucumber. Thinly slice about 1/2 cup of red onion. Chop those kalamata olives in half.&nbsp;

Cut larger tomatoes into wedges.De-seed and cut a bell pepper into squares.Add cucumbers, tomatoes, olives, onion and pepper into a large bowl. Crumble feta liberally over salad.

Pour dressing just before serving, toss and enjoy. You can garnish with more oregano if desired.

Easy Greek Salad Recipe

Known as horiatiki, this traditional Greek salad is made with cherry tomatoes, cucumber, kalamata olives, thinly sliced red onion, and feta. The easy dressing is a mixture of red wine vinegar, fresh lemon juice, dried oregano, and extra-virgin olive oil. Simply said, it's the best. Especially considering this Mediterranean side dish only takes 15 minutes to prepare.

I used a mixture of fresh lime juice and bottled lemon juice (it’s what I could find in the fridge) and the dressing was absolutely beautiful.

Great salad. Only slight changes like adding yellow bell pepper and juice of whole lemon. We have fifty year old Greek restaurant in our area and this salad is every bit as tasty. I’ll be adding grilled shrimp next time.

Great recipe, the addition of lemon juice to the dressing is good. But I prefer serving with a large piece of feta instead of crumbling it when serving. This looks much better, and you can add oregano and olive oil on top of the feta cheese. Also, the Asian woman in the video is very attractive and makes me extra hungry. We could have each other for dessert.

This healthy Mediterranean Cucumber Tomato Salad with feta cheese and pickled red onions takes minutes to make and is the perfect vegetarian summer side dish!

Cucumber Tomato Salad with Feta

cucumbers (medium sized)

parsley (chopped, or other herbs

In a small bowl, mix together the red wine vinegar (2 tablespoons), sugar (1 teaspoon), kosher salt (1/2 teaspoon), and black pepper (1/4 teaspoon). Add the sliced red onions and stir to coat. Allow to sit for 5-10 minutes, stirring once or twice.

While you let the onions sit: cut the ends off the cucumber, slice in half lengthwise, and scoop out the seeds with a spoon. Discard the seeds and slice the cucumber thinly, about 1/4&quot; thick. Add to a large bowl. (And if you prefer, you can peel the cucumber before cutting it.)

Cut the cherry tomatoes in half and add to the large bowl as well.

If your feta cheese isn&#x27;t already crumbled, use a fork to crumble it and add it to the large bowl.

Drizzle the olive oil (1/4 cup) into the small bowl with the onions, add the chopped fresh parsley (2 tablespoons) or other herbs, and mix together.

Pour the onion mixture into the large bowl with the remaining ingredients and toss to coat. Serve immediately for best results.

romaine lettuce (¾-inch thick pieces, about 2 romaine hearts)

Pickle the Onions

In a small bowl, whisk together 1/4 cup red wine vinegar and 2 tablespoons of honey. Add the sliced red onions and allow them to sit for at least 15 minutes. Drain well before adding to the salad.

Prepare the Lettuce

Rinse the romaine hearts under cool running water. Wash the surface and between the leaves to remove any dirt and debris. Shake well to remove moisture and dry using clean towels. Chop the lettuce into about ¾-inch pieces yielding about 8 cups.

Build the Salad

In a large bowl, add the lettuce. Top with cucumbers, tomatoes, green bell pepper, drained red onions, kalamata olives, and feta cheese.

Make the Dressing

In a medium bowl, whisk together red wine vinegar, lemon zest, lemon juice, dijon mustard, 1 teaspoon honey (if using), minced garlic, oregano, salt, and pepper.

Thicken the Dressing with Oil

Slowly drizzle the olive oil into the dressing mixture, continuously and vigorously whisking until you achieve a thickened dressing—season with salt and pepper to taste. If not serving right away, whisk again right before adding to the salad as it may separate over time.

Toss the Salad and Garnish

Right before serving, drizzle half of the dressing over the salad, gently toss to coat. Serve the remaining on the side. Garnish with more vegetables and cheese as desired.

Lemon Juice

Garlic powder is ground, dehydrated garlic. It is a very common seasoning. Applications include pasta, pizza, and grilled chicken. Garlic salt is simply salt plus garlic powder. (Pre-made products usually include an anti-caking agent.) Garlic powder is a common component of spice mix. It is also a common component of seasoned salt.

Set a large pot of salted water over high heat. Bring to a boil. Cook the pasta according to the package instructions. Drain the pasta and pour it into a large salad bowl.

Meanwhile, chop all the fresh produce. Squeeze the lemons. Then cut the block of feta cheese into small 1/2 inch cubes.

In a small bowl or jar, mix the olive oil, lemon juice, oregano, garlic powder, 1 teaspoon salt, and 1/2 teaspoon pepper. Whisk (or shake) well to combine.

Place all the vegetables, herbs, and olives in the salad bowl. Pour the greek dressing over the top. Toss to coat.

Then add the feta cheese to the bowl. Gently fold to combine. Taste, then salt and pepper as needed. Cover and refrigerate until ready to serve.

Made this pasta salad for a potluck and it was such a hit. Everyone loved it so much and it has so much flavor. Really enjoyed this recipe!
